When you're in the food business, food is on your mind (and palate!) all the time. Heed these useful bits of advice from some of the who's who in the local culinary scene on how to cook smarter, eat better, and stay fit while you're at it.

1. MAKE VEGGIE SANDWICH FILLINGS.
"At the start of the week, I grill slices of zucchini, eggplant, tomatoes, and mushrooms, then assemble them in a sandwich with mozarella and homemade pesto whenever I need a snack or a light meal. 2. HAVE A HEARTY BREAKFAST.

3. MAKE FUN PARTY FOOD.

4. GET CALCIUM FROM A VARIETY OF FOODS.

5. CALL IN A SUBSTITUTE.
"Add healthful substitutes. For example, when I prepare salpicao, I use 50 percent meat and 50 percent shiitake mushrooms or tofu." - Sandralyn Hataway, chef
