If you're looking to bask in Philippine colonial history while still enjoy the perks of traveling away from the Metro (read: good food and one-of-a-kind experience), your best bet would be Vigan City in Ilocos Sur. It's a UNESCO World Heritage Site that has maintained its 16th-century charm.
