Honey Oat Icebox Cookies
A fast, homemade treat, this cookie dough can be refrigerated days before baking, saving you precious time.
Takes 30 minutes Makes 24 cookies
1⁄2 cup unsalted butter, softened
1⁄4 cup honey
1⁄2 cup brown sugar
1 egg
2 1/4 cups all purpose flour
1 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 cup quick cooking oatmeal
The Day Before
1 In a large mixing bowl, cream the butter, honey and brown sugar. Beat in the egg. Sift in flour, baking powder, and baking soda. Mix in oatmeal. Dough will be soft.
2 Divide dough into two. Turn out dough on plastic wrap and roll each into three-inch thick logs. Wrap in plastic wrap and twist ends. Refrigerate overnight or until needed.
In the Morning
3 Preheat oven to 350°F.Unwrap dough. Slice into rounds. Place on a non-stick cookie sheet and bake 6-8 minutes. Cool before packing with a milk box.
