Prep Time 25 minutes

Cooking Time 30 minutes

Ingredients:

4 potatoes (approximately 600 grams)

4 pieces Hungarian Sausage

1/4 cup diced red bell peppers

salt and pepper for seasoning

1 cup grated quick-melting cheese

1 lemon

Directions:

1 Boil potatoes in a pot until fork-tender, about 15 to 20 minutes. Drain and let cool.

2 Meanwhile, slice sausages into cubes. Heat olive oil in a pan. Add sausages and diced red bell peppers; sauté until sausages are browned. Season with salt and pepper, remove from heat, and set aside.

3 Slice each potato in half lengthwise. Scoop out potato flesh, leaving about ¼ inch intact. Fill potato boats with sausage mixture.

4 Top with grated quick-melting cheese and bake in a toaster oven for 3 minutes or until cheese is melted. Serve immediately.
