Peanut Butter-Coconut Pancakes
Prep Time: 30 minutes
Makes About 12 6-inch pancakes
Ingredients:
200 grams whole-wheat pancake mix
1 cup coconut milk
1 egg
1/4 cup natural peanut butter
Procedure:
1. Dump pancake mix into a large bowl and create a well in the middle. Pour coconut milk into the well, break in the egg, and finally, add the peanut butter. Whisk the mixture until well blended.
2. In a non-stick frying pan over a medium flame, pour about 1/4 cup of the pancake batter into the pan. Cook until bubbles appear on the surface. Flip it over to cook the other side. Once cooked, remove from pan and transfer to a plate. Repeat until all the batter is cooked.
3. Serve immediately, topped with pancake syrup and butter.
