Who doesn’t like bananas? Packed with potassium, low in calories, and naturally sweet and creamy, it’s one of the world’s most popular fruits, as well as one of the most nutritious. The best time to eat them is when it’s at its sweetest--when the skins begin to turn spotty.

However, if you find that you've let your bananas become more brown than yellow, salvage them instead by making a batch of these delicious muffins to bring to your next party. Read on to see the recipe.

Banana Muffins
Prep Time: 30 minutes
Makes nine large muffins


Ingredients:
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1⁄3 cups banana, mashed
1/2 cup milk
1⁄3 cup oil
1 egg, slightly beaten

Procedure:
1. Preheat oven to 375ºF. In a medium bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
2. Stir in remaining ingredients only until moistened. Do not over mix.
3. Spoon batter into muffin caps. Bake for 15 to 20 minutes.
4. Remove from pan and serve warm.
