Posting my question from prev thread:

re Kinamatisan, has anyone tried frying the pork after cooking, then putting it back again to the sauce? para crispy?

Pork Binagoongan
*got this from Kris Aquino's IG

Ingredients:

1/2 kg pork liempo, sliced into squares
Garlic
Onion (1-2)
Tomato (3-4)
1/2 - 3/4 c. bagoong (I used Barrio Fiesta)
Vinegar (I used coco vinegar from Tagaytay)
Salt
Pepper
Patis
Olive or cooking oil
Optional: green sili, amplaya slices or eggplant slices

Procedure:

1.  Saute onion, garlic and tomato  in oil.  You have to sweat these ingredients in the pan or skillet.
2.  Add pork.  Season with 1 tsp patis, salt and pepper.  Brown.  The patis will evaporate so do not worry about the meat getting salty.
3.  Add 2-3T vinegar.  Do not mix until vinegar is cooked (when you can no longer smell it or around 2-3 minutes).
4.  Add 1/2 c water.  Simmer the pork in low heat.
5.  When the pork is tender, add bagoong.  Add green sili or chili oil.
4.  Add 1/4-1/2 c water to adjust the taste.  You can also put a pinch of sugar if you like.
5.  Simmer the mixture over low heat to reduce the liquid.

Optional:  Add sliced green sili.  I also like to add ampalaya or talong (blanched in water) before serving.

Pork ribs simmered in Sprite

Ingredients:

1 kg. pork spare ribs (finger ribs, American spare ribs or country style)
1 c. Sprite
1/2 c. sugar
1/2 c. soy sauce
Pepper corns
1 head, garlic, chopped

Procedure:

Combine all ingredients in a casserole or pressure cooker.  Simmer until meat is fork tender.
