For those who bake cookies: do you omit baking soda in your cookie recipe? I can't find baking soda here so I bought bicarbonate of soda instead since sabi pwede naman. Kaso after baking there is a bitter taste in the cookies. I was thinking because of the bicarbonate of soda? I didn't use too much I measured it according to the recipe. So I did a second batch and decided to omit the bicarbonate of soda, but instead of the dough spreading out while baking (I have to roll them into balls and then they will spread while baking. It's a brown sugar oatmeal cookie ), they stayed round and came out similar to chocolate crinkles style = domed with a crispy outer shell and soft inside =(  bakit ganoon? anyone had a similar experience?

Yes, same lang sila. Retry mo nalang sis yung recipe. Baka nasobrahan ka lang sa measurement ng baking soda without noticing?

I tried baking mocha swiss roll - recipe from youtube. Ok naman yung lasa pero yung cake hindi umalsa :( manipis lang sya kaya nagflat sya nung ni-roll na :(.. Iniisip ko dahil walang baking soda or baking powder dun sa recipe? Alin ba dito yung nagpapaalsa hehe sorry. Pero yung sa youtube naman ok naman yung itsura ng cake nya.

Tapos yung icing naman, tagal ko na nagmimix di parin maachieve yung soft peak texture! hindi kaya nasobrahan sa butter? Nakakaaffect ba yung dami ng butter sa texture niya? Egg white + sugar + butter lang naman yung nilagay ko.

^Genoise ang ginagamit for rolls. May ibang recipe na walang baking powder, aalsa ang cake sa pag beat ng egg whites to stiff peaks. Sa final step, ifo fold yung whites sa yolk mixture - be gentle, do not overbeat.

^^^baka sis nalagyan ng egg yolk yung eggwhite mo.. pag nahaluan kasi ng yolk yung egg white or oily yung mga gamit mo sa pagbeat mahirap maachieve yung soft peak..kaya ang resulta ng cake hindi masyadong soft.


Mga sis ang problema ko naman is yung rolled fondant.. nahihirapan talaga ko.. hindi ko maachieve yung pliable fondant..laging fail gawa ko.. kaya hindi ko tuloy macover mg fondant yung cakes kasi nagccrack siya.. any tips mga sis.. ano ba ginagawa niyo?? Ilang minutes niyo siya dapat iknead para maachieve yung pliable texture ng fondant..

^ What fondant do you use sis? Never had a problem with MMF (or DLA for store-bought) :) Anong nangyayari, super tigas ba?

Knead lang ng knead sis. If hindi talaga nagbago or you feel dry talaga ang texture, add shortening.

Marshmallow fondant sis..  tapos i tried rolled fondant kasi sabi ng friend ko who's into bakinh din na mas madali daw gawin yung rolled fondant kesa sa MMF.. but when I tried it, mas mahirap pa siya kesa sa  MMF.. nakapag cover na ko ng cake once sa MMf.. pero hindi rin siya ganun kapulido.. nagccrack di siya mga ilang oras after macover yung cake.. any tips mga sis.. need ko ba mag enrol sa short courses for fondant making or no need na..
Penge naman ng recipes for fondant.. di ko kasi alam kung san ako  nagkakamali eh.. di ko alam if kulang ako sa shortening or sobra eh..

^ Kapag nagccrack sis it means kulang sa shortening. Knead ka lang ng knead, marshmallow fondant needs much mooore kneading talaga. ;D Kapag nacoveran mo na yung cake, pwede mo punasan ng onting shortening yung fondant. :)

I want to try baking a cake and to try frosting kaso I can’t seem to find a recipe that calls for a 6” or 4” cake. Yung mga nasesearch ko puro 8 or 9 inch round cake. How do you cut the ingredients and baking time pag ganon?

^ Sis why not try baking two 4" cakes, tapos yung isa nalang muna lagyan mo ng frosting? It's not advisable to halve a recipe, nagkakaron kasi ng discrepancy sa ingredients.

with baking, everything has to be measured and precise... so unless you've been baking for YEARS, don't attempt to alter the recipe.

My favorite thing to bake aside from brownies is chocolate cupcakes with chocolate ganache centre. This is TO DIE FOR. When I first baked it, I found the ganache filling a tad sweet so the next time I baked it, I lessened the powdered sugar... and it was just right.

^^sayang kase, pano na yung other cake? hehe. 2 lang kase kame sa house kaya wala rin ibang kakain, and yun nga gusto ko rin pagpraktisan is maliit na cake lang muna.

Hi mga sis, meron ba sa inyo nagtake ng tesda course NC II basic baking in matikina polythecnic college? I'm interested kasi eh. I know i can learn by following the instructions given in a recipe but i want to get kasi certificate so i can use it to find a job in the future. hehe thank you!

Mga sis meron ba ditong baking paper na papel talaga? Where to buy? May nabili kasi akong baking paper sa Daiso and parang wax paper siya. May nakikita kasi akong pics online yung paper type talaga they use it for lining loaf pans. Gusto ko kasi yung malaking roll na yung sa Daiso 6 meters lang.
