^This is super easy. :-)

Choco banana cupcakes

1 3/4 flour (Healthy alternative: use 1 c gluten free pancake mix + 3/4 brown rice flour)
1 1/2 c sugar (or coco sugar)
3/4 c hershey's baking cocoa
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup buttermilk (or evap milk + 1 tsp vinegar, let curdle for 5-8minutes)
1/2 c oil
2 eggs,beaten
1 to 2 bananas, mashed
1 tsp vanilla essence
Mix, mix lang. Add 1 cup hot water to make it moist. then bake for 10-15mins 😊

I did not use an entire cup, maybe I left behind about 30ml water, then added about 8-10 minutes cooking time because he batter is runny.

Next time I make this, I plan to add chopped walnuts and maybe another frosting (aside from buttercream).

Does anyone know of Gretchen Price from youtube? Formerly known as Crumboss but she now has a new baking channel which is WOODLAND BAKERY.

I can vouch for her that her recipes DO WORK. All the time for me, that is. :D Napakabait magbigay ng tips in baking. The simpliest most common trick that newbies seem to not know, she just give it away for free.

I have tried these recipes of hers and yes, they all turned out well. :)

Red Velvet Cake
Red velvet cake pops
Moist Vanilla Sponge Cake
Vanilla Custard
Swiss Buttercream


She teaches her viewers how to build on recipes. And since, sya lang naman ang pinapanood ko sa youtube, her tips kinda rubs onto me na. So What I did, I built a recipe. I used the Vanilla Sponge cake, the Vanilla custard (half a recipe) and a can of fruit cocktail and I was able to make Crema de Fruta.  :D So happy since nagustuhan nilang lahat. Wasnt able to take a pic but it yielded a large pyrex dish almost to the brim. Hindi ko na nga nailagay yung gulaman kasi baka tumapon na. hehe

Girls, do check her out. Impressive recipes that DO work. ;)

Chocolate milk tart

Ingredients
 
1 tin condensed milk
750ml milk
45ml corn flour
60ml cocoa powder
5ml vanilla essence
2eggs
45ml butter
1packet of coconut/tennis biscuits cinnamon for dusting

 
Reserve 125ml of the milk and add the rest of the milk together with the condensed milk to a medium saucepan and gently heat until hot and steaming - not boiling.
While the milk is heating, combine the reserved milk, corn flour, cocoa, essence and eggs. Add this mixture to the hot milk very slowly, whisking over moderate heat until thickened. This should take no more than 5 minutes.
Remove from the heat and stir in the butter.
Place a layer of biscuits into a greased tart dish. Spoon the hot custard over the biscuits and dust with cinnamon.
Allow to stand at room temperature to set for about 45 minutes to an hour or chill in the fridge.
Best served at room temperature with good coffee.

I just want to know kung meron na nakagamit ng ordinary butter for frosting? I'm using anchor (unsalted butter) but I would like to try sana gumamit naman ng ordinary butter para mas cheaper. Ok naman ba yung texture ng frosting?

Hi sis, yung gamit ko ay magnolia butterlicious, ok naman yung texture nya. I dont like very sweet frosting kaya hinahaluan ko ng cream cheese at ayaw ko rin yung tumitigas ang frostin pag ilagay sa ref, usually for me. 1 cup cream cheese , 1stick butter, 1tsp vanilla,  1-2 cups icing sugar at milk, that can cover 12-15 cupcakes.

Yup, pwede na normal butter. Just as long na it's not gonna be a buttercream frosting. :)

nung nasa pinas ako, i only use baker's best or dairy creme kasi mahal ang anchor or magnolia.

i'm questioning myself right now, kung yung baker's best and dairy creme ba ang sinasabi mong normal/ordinary butter here, because it's cheaper.

my mil who bakes a lot (also accepting orders), used those for buttercream frosting. i, too, have used it for buttercream.

TRied baker's best  sis, ok naman sya, mostly sa batter ko lang siya ginagamit.. Para sa akin, mas magandang butter, mas malasa ang frosting.

another frosting i regularly use is the marshmallow frosting. kids love it so much. even adults, hindi magdadalawang isip kainin yan. hindi kagaya ng sa buttercream, parang maaatake sila pag nalaman nilang butter pala yun.  ;)

Yup, by normal butter I meant yung dairy creme, etc. Those aren't real butter naman talaga, and they have really different taste from anchor, magnolia or elle. And you can see the difference talaga sa quality. Ako I use those kinds din naman, pero for batter lang talaga. Or frostings na may strong flavor such as chocolate or peanut butter. Pero when it comes to the ones that has to have distinct butter taste such as yung buttercream nga, eh you should use unsalted butter talaga. Kasi sobrang laki ng difference.  :)

^well, magkaiba lang tayo ng technique sa buttercream.  :)

my chocolate frosting has no butter in it. so far, i only use butter for buttercream, swiss meringue buttercream, and creamcheese frosting.

Hi sis, you might wanna try this recipe,http://www.glorioustreats.com/2011/07/perfect-vanilla-cupcakes-recipe.html. i tried yun ibang recipe nya, the best yung results. But havent tried this one yet, di kasi ako makahanap ng pure vanilla extract. I have tried making vanilla cupcake before from other site, di ko nagustuhan yun lasa, siguro dahil hindi pure vanilla yung ginamit ko.

I want to share this recipe of moist chocolate cake, got this from internet at kusina ni ted. I've tried many moist chocolate cake recipes before but definitely, this is the best!

Ingredients
Dry Ingredients
2 cups                                  All Purpose Flour
2 cups                                  Sugar
3/4 cups                               Cocoa Powder (I used the Tulip Brand)
2 teaspoons                           Baking Soda
1 teaspoon                            Salt

Wet Ingredient
2 pieces                                Eggs

1 cup                                    Milk
1 cup                                    Vegetable Oil
1/2 cup                                 Mayo

1 Tablespoon                        Instant Coffee dissolved in
1 cup                                    Warm Water
1 teaspoon                            Vanilla

Icing
1 can                                     Condensed Milk (I used Alaska Condensed Milk.  Next time I'll used
                                             Milkmade to see the difference)
2 oz                                       Bittersweet Chocolate (Use unsweetened chocolate to reduced the
                                              sweetness.  I used bittersweet because its the only chocolate I have now.)
2 Tablespoons                        Unsweetened Cocoa Powder
pinch                                     Rock Salt
2 Tablespoons                        Butter

Procedure for the Cake

1.  Preheat oven to 175 degrees Celsius.  Combine dry ingredients and shift to remove lumps.  Whisk with a wire whisk to combine all the dry ingredients.
2.  Beat eggs, milk, oil and mayo until well incorporated.  Add coffee-water mixture and vanilla.  Mix gently.
3.  Add the dry ingredients into the wet ingredients 1/4 cup at a time with medium stirring, just enough to incorporate the dry ingredients into the wet ingredients.

4.  When all the dry ingredients are mixed into the wet ingredients, transfer in 3 pieces 8 x 8 round baking pan. Give it a gentle tap just to remove some bubbles and give your batter at least 15 minute rest.  (I usually rest my batter after giving it a few taps to give time for the bubbles at the bottom of the pan to rise.)
Pop in the oven and bake for 18 - 20 minutes or until inserted toothpick comes out clean.

Procedure for the Icing
1.  Combine the condensed milk, chocolate and cocoa powder in a pan.  Heat over low heat with continuous stirring for 7 minutes.  Add rock salt and stir for another 2 minutes.  Then add the butter and stir for another 1  minute, all in all a 10 minute process.  Pour over cakes while still hot.

^ sis thanks for the recipe. Im also looking for this recipe and been to several sites, mostly na mga filipino recipe, may mayo. Anong brand ng mauo gamit mo sis? milkmaid is really the best for condensed milk. Eto din gamit ko when making dulce de leche.

How is Dulce de Leche different from Tres Leche (following a recipe posted here by one of our sisses, from Heny Sison cooking school)? I tried Trea leche yesterday and it looks and tastes okay. However some of the pictures of Tres Leche I saw from the Internet are really soaked with the filling while some have baking soda and a bit cakey.

Ano ba talaga dapat?
