Sis Maika14, If you find kitchen aid too pricey I suggest tefal mixer. Yun din ni-recommend sa akin ng teacher ko sa baking class nun. I got myself one back in 2011, and until now ok pa sya. I used to sa mga frosting, and ok naman. dati nasa 5k+ sya, baka nagmura na ngayon. Plan ko din bumili ng kitchen aid mixer pero siguro kapag madami na akong regular clients. :)

It's a dough whisk na inilambing ko kay bf abroad kasi wala dito nito. And I don't have the space (ehem*and the money*ehem) for a Kitchenaid at home. So far I've tried it for bread. Next time, pie crust, then cake batter. Reviews say it prevents overmixing the pie dough/cake batter.

Tried baking cupcakes last weekend using Panlasang Pinoy's cupcake recipe (used mocha frosting instead - just added coffee dissolved in hot water).  Nasarapan si hubby and my daughter (who helped me mix the batter and the frosting) but I noticed hindi sya ganun ka-fluffy, it's parang compact inside.  What could be wrong?  The ingredients kaya or the technique?  Alternate din pag lagay ko ng dry and wet ingredients ng batter.  Hmmm...

tips:
1- try not to over mix.over beating toughens the gluten content in the flour. ALWAYS mix you wet ingredients SEPARATELY BEFORE introducing it to your dry ingredients.

2- if the recipe calls for 1 cup butter,try substituting half with canola oil.Or,better yet, if you can find butter milk. apple sauce works as well (but I'm not fond of using this)

3- underbake it a bit.if the baking time says 180 C-25 minutes, turn off your oven at the 15-20 minute mark.The oven will stay hot to finish the job anyway.

4- if you prefer sponge-like cupcakes,follow a spongecake recipe and not a quick bread cupcake/muffin recipe.this requires more steps -like beating the egg white separately.

yung niece ko ang galing gumawa ng cupcakes kahit walang baking experience mas magaling pa siya gumawa sa aunt niya na nagaral ang sabi niya sa akin she underbaked the cupcakes daw.  Yung friend naman ng mom ko na magaling magbake once told me na yung flour daw binubuksan niya for a few hours bago niya ginagamit para ndi masyadong butas butas yung mga cakes niya.

thanks sa suggestion sis. How's the motor? hindi naman umiinit sa matagalang whipping? Pwede din sa bread? Alam mo yung bata sa candy store? Ganun itsura ko pag napapadaan ako sa store that sells kitchenaid. So kawawa.  :P

sis andee how?, mukhang muscle power yan ah! Bread pa yung ginagawa mo sa background. :) Looks interesting. Ano name? :)

yung motor, umiinit sya ng konti pero hindi nag-stop. yung mga handheld mixers daw kasi humihinto kapag mainit na. Nakagawa na ko ng marshmallow icing, boiled icing, brazo (requires stiff egg whites), ok naman result :). Hindi ko pa na-try sa bread, hindi pa kasi ko marunong :D. Nagamit ko na yung for fondant, kaya naman.

^ako naman ang pilit kong ina achieve sa buttercream e yung creamy style.

yung buttercream ko, butter lang gamit ko, walang shortening. tapos confectioner sugar, vanilla, konting milk. spreadable naman siya, tsaka hindi natutunaw.

hindi ko pa natry ang boiled icing pero si mil yan ang ginagamit pag nagdedecorate siya ng cake, imbis na buttercream. dito kami sa uae, extreme ang weather, tsaka humid. kaya lang, from house, diretso na sa party. at yung mga party na pinupuntahan namin dito, palaging indoor. kaya hindi ko masasabi kung hindi siya matutunaw sa outdoor.

ako naman, marshmallow icing ang ginagamit ko pang decorate, kesa buttercream. ganun din sakin, from house to event venue, okay naman ang icing. not also sure kapag sa outdoor na.

stable na icing rin hanap/gusto ko. balak ko kasi ako na lang gumawa ng cake ng baby ko everytime na nagcecelebrate kami ng monthly b-day nya. yun nga lang medyo mainit kasi hindi naman centralize ang house namin.

BTW sissies how do you store your shortening(crisco)? room temp lang o sa fridge?

question ulit.
what if...
(a) the recipe asks for 1 cup cocoa. does that mean unsweetened or sweetened?

(b) the recipe asks for 1 cup unsweetened cocoa and i just have the sweetened one ( hindi ko kasi binasa yung label, nagmamadali ako, sweetened pala yung nkuha ko. my bad! ) can i substitute it na lang? how? :)

^my answer:

(a) 1 cup cocoa = i always use unsweetened. yan lang gamit ko for baking. unless naka indicate na "sweetened cocoa" ang dapat gamitin. pero wala pa ako nakitang recipe na nag call for "sweetened" cocoa.

(b) hindi ko masasagot kung ano pwedeng isubstitute sa unsweetened cocoa kung sweetened cocoa lang ang meron ka. pwede siguro bawasan mo yung sugar sa recipe??

pero, kung sakin nangyari na mali ang nabili kong cocoa, babalik ako sa grocery at bibili ako ng unsweetened. hindi ako magbebake hanggat kulang/mali ang ingredients ko.

^thanks sis. bumili na nga lang ako ng unsweetened. ginawa na lang namin choco drink yung nabili kong sweetened.

i tried baking kanina and found out defective na nga talaga yung oven namin since years and years ago pa nagamit. what i did i tried to rice cooker ( nabasa ko sa net pwede raw ) but no luck. after ilang minutes bumabalik na sa keep warm and hindi ko agad maswitch sa cook. kaya just to save my mixture, inisteam ko. ok naman, soft and hindi dry :)

nakita ko sa youtube pwede rin sa microwave. may nakatry na ba sa inyo gawin yun? balak ko kasi itry pati yung sa pressure cooker, baka next month pa kasi ako magkakaoven.

^ang alam ko, may mix na para sa oven toaster. hindi ko alam kung pwede rin sa microwave.

turbo broiler pwede rin pang bake. may episode nun sa kris tv (excuse me lang sa mga may ayaw kay kris ha, hehe), nagbake ng choco cake si sweet using turbo broiler.  mga 10" round siguro yung pan niya. so pwede rin dun yung smaller round pans, tsaka individual muffin pans, loaf pan pwede rin siguro.

gusto ko talagang bilin yung oven na nakita ko dito. kasing laki siya ng ariston oven namin sa pilipinas pero, imbis na isang door siya na malaki, dalawa ang door niya, taas at baba. so pwede ako magbake ng marami at the same time. kaya lang electric siya, baka mamahal naman sa kuryente.

years ago, nag-try ako mag-bake sa microwave, ok naman pero much shorter yung time compared sa oven. kaya need bantayan talaga. Also, ang alam ko hindi pwede sa microwave ang mga aluminum pan na ginagamit for oven baking. kaya silicone gamit ko noon.

^sis ano difference ng bake sa real oven at sa microwave? we have those microwave-safe glass bowls/containers naman. i never tried using silicon sa micro baka kasi kung ano mangyare, hehe takot lang, and baka hindi food grade yung mabili ko :)

milk = minsan evap gamit ko, minsan fresh milk. kung ano meron.

i think may nagtanong na nito dati, kung may difference sa lasa ng cake/cupcake kung evap or fresh milk ang ginamit.

sa case ko, for my cake recipe, usually, evap talaga ang gamit ko for milk. e naubos yung stock ko, at yung tinatakbuhan ko na supermarket for emergency grocery, wala din stock. kaya fresh milk nalang ginamit ko. same taste pa din. halos wala namang pinagkaiba pati sa texture ng cake.

^ how about sa fresh milk & full cream milk, may difference kaya sa texture? kasi ang gamit ko nestle fresh milk 69.50 pesos, eh i saw milk magic full cream milk na less than 60 pesos lang, mas mura :-)
