I use spaghetti squash. When blanched, it's like angel hair pasta noodles. Not the same as rice noodles of course pero pwede na. Pikit mata nalang para kunwari hindi sya kalabasa. For the sauce, I just guesstimate everything. I never actually measure. I base it all on my palate.

Paleo Palabok ( serves about 12)
1 lb shrimps- wild-caught kung available
about 2 tbs of anatto seeds
1 cup hot/warm water
5-6 tinapa flakes or in my case I used Spanish Sardines ( which I made din from scratch)
Patis- the brand I used is Red Boat
2-3 cloves garlic, minced.
Eggs, Spring Onions and Chicharon as toppings/garnish


Ok here's how I do it.
1. In a pan, heat some olive oil and saute the garlic and fish flakes. Meanwhile, take a cup of hot water and soak the anatto seeds for at least 10 minutes.
2. In a separate pot, bring about a liter of water to a boil. Add in shrimps, and cook for about 2-3 minutes, just to bring out the color.
3. Strain the cooked shrimps, remove shells and heads. Set the meat aside and now for the shells/heads, I grind it with my food processor and squeeze whatever juice they have left in them.
4. Add the sauteed fish to the pot of your shrimp stock. Then the anatto juice (?)  ;D
5. Add patis according to taste.
6. Simmer for at least 15 minutes.
7. To thicken the sauce I used almond meal or almond flour. Like i said, i dont really measure. If i think it's the right thickness na, then I stop.
8. Since I was planning on freezing the rest of my palabok, I went ahead and added the noodles, sliced eggs, spring onions and more fish flakes to the sauce.
9. I use a scale to measure out 8oz per freezer bag. I ended up having 10. I ate 2 servings while bagging. LOL!

Im sorry if my recipe is not that reliable. It ended up tasting really good naman. Like the palabok I used to buy on my way home from school ( Anyone from Legarda, Manila?)

I just realized that very Paleo-friendly pala ang Filipino dishes.
Examples:
Sinigang- I stopped using the sinigang mix na. My mom never did, and she used guava, green mangoes, lemon or tamarind instead. And it's really good! Lalo na yung guava na pampaasim.
Adobo- they say authentic adobo does not have soy sauce. I use sea salt for my adobo and adobo parin naman ang lasa.
Tortang talong
Kinilaw
Dinuguan
Lechon
Sisig
Bulanglang- easy on the salt
Ginataang hilaw na langka
and the list goes on..

Earlier today I made bistek with grapefruit juice and salt. I was too lazy to go buy lemons kasi kaya grapefruit nalang. And it turned out really good too. I was so tempted to eat it with rice pero I ate it as is nalang. lol. Post more mga cavewomen!

^May nabasa nga akong american blog asking kung anong country sa mundo yung paleo ang food.

May sumagot na save for rice, pinoy dishes are very paleo.

Kaya sa diner sa malapit sa office, I order kahit ano, hindi lang ako nag-r-rice.

Syempre, there's no telling kung grass-fed ba yung meat or not, pero, at least may option kung hindi ka nakapagprepare ng food.

Wow sandali lang ako nawala ang dami nang posts! I'm so glad that paleo is catching on. My brother-in-law just started and he's so happy kasi lumiit yung tummy nya and he doesn't crave sweets anymore.

I want to try preparing my meals for the whole week (nakita ko lang sa instagram na there are those who do it). Ok kaya i-store yung cooked food sa ref (not freezer) for 1 week?

Do you guys use PAM Spray? Apple cider vinegar or braggs amino?
May natira pa kasi ako ingredients eh. Allowed din ba mag use ng mga garlic powder or mga seasonings?

I work with someone who used to do paleo diet. He said it is very effective but very hard at the same time, especially for us Filipinos who loves white rice. I don't use garlic powder kasi processed na sya. Think like you're like a cave woman. May garlic powder na ba noon? Or may salt na ba noon? That's how I do it whenever I cool. And no PAM. It's vegetable oil kasi. Pwede ang ghee, or clarified butter. A little bit of bacon fat and olive oil.

For cooking, use virgin coconut oil, lard, or olive oil. Apple cider vinegar is ok. I use garlic powder and onion powder though I believe it's a gray area, like salt. Yung big no-nos like rice, bread, dairy, sugar, and processed foods lang talaga ang ina-avoid ko.

I started Paleo around Nov '12 lang and I dropped 20lbs na just because I stopped eating rice and any kind of starch. It's a lifestyle change talaga for me. Bonus nalang yun pag lose ng weight. I run 2 miles every day, that's my exercise na. Some Paleo peepz do CrossFit, pero I prefer running.

sis aicute12, if you take it seriously, you will really lose weight. more importantly, you'll get healthier! i started almost a year ago and although i didn't lose a lot of weight (i'm not fat) but the changes in my body are amazing. i don't get headaches anymore, my energy level is stable, and i feel lighter!

it would be good to complement paleo with physical activity, kasi that's how our ancestors lived - they were very active. super effective ang crossfit and paleo combo!

it's essentially a gluten free diet plus restricted din ang other grains which makes it even better. i feel so much better when i started this gluten free thing. i've been on low carb for 7 months pero the benefits only showed up after i removed gluten from my diet. and a lot of people are talking about this, how you get rid of acne, acid reflux/heartburn/IBS/low energy levels and generally feel a lot better on this diet. ang sabi kasi wheat is really bad for human consumption. you only realize that after going paleo for a few months.

^ true! being healthy is 80% diet and 20% exercise. for me, paleo has become more about making my body feel good.

pasali mga sis. i'm on a gluten-free/GAPS diet na may pagka-paleo din. day 3 pa lang ako at very challenging hehe. may autoimmune thyroiditis kasi ako kaya ko naisipan subukan 'tong diet na' to.

paleo and gluten-free diest are best for those with leaky gut, na cause din ng mga autoimmune diseases.

anong kinakain nyo for carbo? ako kasi gluten-free noodles made from rice bran tsaka gluten-free rolled oats. alam ko bawal yun pero wala akong maisip na ibang source ng carbo.
