apart from reading or collating recipes from the net, it really helps when you watch cooking shows sa tv, especially sa food network, even "special" dishes are sometimes easy to prepare and not that complicated afterall.. :)

the basics, you can also learn from those cooking shows. start ka from simple, easy to prepare dishes to more complex ones.. :) madali lang yan sis, na-acquire ko lang din cooking skills ko from watching cooking shows, and i get special orders narin minsan from people na nakakatikim ng food na pinrepare ko.. :) But then nakakatamad magcook for others, kahit bayaran nila parang its not my cup of tea, mas naiinspire ako magluto when i know its for my family, nakakawala ng pagod once you see na nasarapan sila sa luto mo.. :)

sweetestCORN - sis one of the best tips i can give you is "taste as you cook" ("clean as you go" would also be helpful, especially if you're doing the dishwashing/cleaning up afterwards). yes you can follow a recipe to the letter, but i believe it's best to taste the dish a few times while it's cooking. this is applicable to cooking stews, or those with sauces or stocks - for baking, you need to follow the precise instructions. by following the "taste as you cook" principle, you'll also develop your instinct for cooking - what's lacking in taste, what needs to be added, how to check if the cooking's done, etc.

i remember when i made mojos for my nieces and the whole family - i wasn't too sure what the finished product would taste like. so i fried a mojo/potato piece one a at a time then tasted it; i adjusted the breading (added more salt/paprika/pepper) until i got the taste i wanted. i ended up too full to enjoy the finished product because by the time i finished, i ate 4 mojo pieces na ata - naumay na ako.  ;D but at least i had a pretty good idea of what spices had to be added or lessened for the perfect mojo.

re: specialty, my niece says it's orange squares. my husband loves the way i cook guinataang sigarilyas/kalabasa & sitaw, pork or chicken adobo, chicken paprika, baked rosemary chicken, tuna spaghetti, fish fillet with oyster sauce, etc - but with those dishes, i mainly use the tantya system so it's hard to give a recipe. :-[

hope this helps sis, good luck! don't be afraid to experiment and have fun in the kitchen (and also to make a few mistakes at first) - that's the way to build a cook's confidence. :)

^ tama, thats what i do rin, no specific measurements of the ingredients, tancha tancha lang din or "eyeball" the amount as per Rachael Ray. wahaha! :))

to sis sweetestCORN - you can actually tweak recipes to suit your hubby's taste, baka kasi may specific timpla sya na gusto, like for example sa adobo, some want adobo sweet ng konti, or if he wants more sourness from the suka.. :)

few basic tips that can do wonders to your cooking :

- when cooking with vinegar (adobo, etc..), pagka-pour mo ng vinegar sa pot sis, wag mo muna hahaluin para magevaporate yung amoy ng vinegar, it leaves lang the vinegary taste pero yung amoy mawawala.. If you stir it kasi kaagad, hindi namamatay yung amoy ng vinegar. :))

- another pa pala is pag nag-gigisa sis, put the garlic ng hindi pa mainit yung oil, coz if you put the garlic ng mainit na yung oil, hindi na lalabas yung flavor, masseal lang sya and the garlic will brown na agad ng hindi naeextract yung flavor.

- a little secret ingredient naman that i add to my tinola is konting dried oregano.. :) it makes the soup more aromatic and mas nakaka-help makarelieve ng colds/cough. :) basta remember to add spices to your dishes gradually, like what sis silverlilac mentioned, tikim lang ng tikim para hindi mo ma-overdo ang salt or whatever spices na nilalagay mo.. :) to take the lansa off the chicken pala, saute it first sa garlic and konting ginger, pag white na yung chicken meat, thats the time youll add water for the sabaw.

those are just the basics that would prolly help sis. especially yung tinola, one of the dishes my family asks me to cook palagi. :)

dati engot engot din ako sa kitchen, but when I stopped working I realize I need to cook. Magastos magpondo ng kusina. hehe...

I strongly suggest that you visit different websites for different recipes and the magic in cooking is tikim before you serve!

Nice tips. When i got married dun lang din ako natuto magluto.

Feeling ko mag amoy-amoy lang ng aroma, which I will not recommend yet, with my unreliable sense of smell. LOL!

Pero surprisingly napupuri naman nila most of my cooking. I research recipes too, tapos make adjustments, then take notes pag nagluluto ako, so next time my reference nako what or what not to do.  :)

I do wish marunong ako mag-tancha. Medyo mahina kasi ako dito.

Ooooh, I love to eat that's why I learned how to cook!  :)

I cook various dishes which are always most requested during family events and get together with friends. But among my personal favorites are Bicol Express and Blueberry cheesecake for dessert.  :)

i lived with my grandmother so natuto talaga kami magluto dahil take turns kami nga cousin and kapatid ko na magluluto for everyone. bawal ang hindi marunong sa chores. plus nag-aaral talaga ako para hindi puro prito kasi ayoko din ng tumatalsik na mantika.

you may want to check www.panlasangpinoy.com. its a tutorial on pinoy cooking. very informative. dyan natutuo si hubby.  ;D minsan mas masarap pa yung luto ni hubby kesa sakin.

not really a specialty pero one thing i like to cook is
aglio oglio pasta. its just pasta, butter, garlic, ham/bacon bits and lots of parmesan cheese! and mashed potato. sometimes, i fry the mashed potato on a non-stick pan w/o oil  para magcrisp ng konti. sarap
