I love wine. I've been to some of the award-winning vineyards in the world. I think my love for different cuisines made me a vino aficionado. I learned to develop my palate over the years and got educated by wine connoisseurs and sommeliers along the way.

Here are some of my fave wines and what I pair them with:

Pinot Noir (red) - Good for pasta Italiana, pork, beef and cheese

Sauvignon Blanc (white) - Good for any types of cheese; perfect to pair with appetizers, seafoods, fetuccini Alfredo, turkey

Chardonnay (white) - perfect for light seafood, grilled fish, turkey, pork, appetizers, oysters

Merlot - good for steaks and pasta with red sauce

Cabernet - same as Merlot

^Last year, I was in Germany. I stayed near those vineyards nga, pero I wasn't so excited about the wine-tasting, so hindi na lang namin ginawa. Now that I appreciate wine more than I did before, nagsisi ako, I should have been to those. :(

Food parings do not bother me though. I guess the basic rule is, dapat mas may body ang wine kaysa sa food.

My staples are Cabernet Sauvignon, Merlot, Chardonnay. The Pinot kase, kinda pricey to get a decent bottle of that kase, hehe. The others, at least I can get a decent bottle na hindi ganun kamahal.

I'm fortunate to have access to very affordable Pinot (and other wines), sometimes at 90% off but I guess if I had to buy it at a regular price, I don't think I will or, if ever, I would from time to time.

Of all, I love Chardonnay the most because you have to chill it first and it is so light. I also prefer seafoods over meat so that explains it.

Food and wine pairings are a must for me because that how you'll enjoy your dish even more. Wines bring out the flavor of your dish.

Anyway, the basics are: white wine is for seafood, red wine is for meat / steak.

What about dimsum kaya? Of course it depends on how the food is cooked and what kind of meat is used, but generally speaking...?

Ay, I've also read pala that chocolate (esp dark ones) goes well with Cabernet. I can't imagine, anyone's tried this?

I actually don't enjoy wine that much.
IF i were to choose, i would rather drink white wine then red.
And if i choose from red if i would drink dry, sweet or sparkling, I would go for sweet or sparkling.

But I do love Jacob's Creek. I tried it once when I had dinner with co-worker's before and it was quite nice.

And I love chardonnay

I've been drinking wine for almost 15 years now but I wouldn't call myself an expert; I've just developed a preference over certain varieties. I normally drink Cabernet Sauvignon (I find Yellow Tail a good brand) because I like the flavor and it's not as expensive as Pinot Noir, which I also love but do not buy regularly because it is, like I said, expensive.  :)

As for whites, I'm not really a white wine person, but I absolutely love Prosecco!

Ay, I've also read pala that chocolate (esp dark ones) goes well with Cabernet. I can't imagine, anyone's tried this?

That would be me! I'm not very big on wine and meal pairings because I normally drink it as a night cap, after I've put my child to bed and the chores are done. So it's normally dark chocolates and cab for me and my husband. But if I have time to leisurely enjoy my dinner, I usually have red with my steak.

^I find Yellow Tail Chardonnay good, and the quality is consistent. It costs around P450/bottle.

Kung gusto mo ng mas mura, you can try Carlo Rossi Chardonnay, a fruity wine. It costs around P300, if I remember correctly.

I love wine. But I do not drink merlot... or at least, I prefer not to drink it (unless someone here can give me a really good reco.)

For reds, I prefer Shiraz, for whites, I like chardonnay. I had a bottle of white once, it was very, very, very crisp and light, but still flavorful.

^ Manginginom lang since birth. Joke! Aside from Jacob's Creek and Yellow Tail, another affordable brand is Hardy's. Dati between 300 - 550 may makukuha na akong magandang red. It is more difficult to find a good red for that price, IMHO.

Re chocolates, it's good to pair this with sweet wines. I first tried this pair at Castello di Amorosa in Napa Valley. The flavors exploded in my palate.

In December I was in Sonoma and visited the oldest winery in California (Buena Vista). I also visited Viansa, Gloria Ferrer, Gundlach-Bundschu, St Francis, Chateu St Jean, Kenwood Vineyars, and Sebastiani.

I'm going back to Napa in June for a day. This time, I'd like to ride the Napa Valley train and dine on-board with the sprawling vineyards in the backdrop. Tamang-tama kasi summer na.

I feel it's too hot for reds lately, so my choice of wine for summer is The Accomplice chardonnay.  It's a little fruity, so I enjoy it with some brie and prosciutto (my personal rule: if it's a fruity wine, I take it with salty appetizers; if dry, with chocolates and/or grapes). I actually like it better than Yellow Tail. It's available in Wine Depot.

Hello, is this thread still open? I want to ask for your suggestions on what wines I can buy that will age well and is available locally? see, I just got married early this year and my spouse and I thought of buying a few bottles that we can open on our 10th, 25th or so wedding anniversary, or on our (soon to be) children's wedding hehe. anyway, I read somewhere that not all wine can be aged since most wines that are available aren't made to be aged. hoe you guys can suggest some that are available locally, not really a fan of wine here but maybe in a couple of decades or so, I might learn to appreciate the taste lol. I'm thinking more of white wine or champagne. thanks in advance to whoever will answer!

^That's a sweet thought. I don't collect aged wines, but I recommend visiting Wine Depot and Terry's (Podium) if you're looking for some. The thing with that, though, is you can't simply collect and put them in your pantry. You have to have proper storage conditions. Are you in Manila? It's so hot and humid here, not so ideal for keeping wines. You can buy a wine fridge, but another thing to consider is the fluctuating supply of electricity (unless you have a generator at home).

I'm thinking an option would be to buy aged wine at Terry's and let them keep it for you? They have a huge  walk-in wine fridge. Hope that they're still around in 25 years. Talk with the owner and check your options.

Aged wine can be very expensive, and some unpleasant things can happen to them during storage, like cork taint (which you can't tell until the time you open and taste it). You can return corked wine if you buy now and consume it, but I don't think you can do that after 10-25 years.

Or save your money and buy already-aged wine/exquisite champagne on your 10th, 25th anniversary. :)

Meanwhile, start drinking and honing your palate. :)
