natakam din ako sa leche flan ni sis jenny_2284. nakagawa na ako dati ng leche flan, pero sa stove, steamed siya. medyo malambot nga lang. maganda sana kung nahohold pa yung shape kahit naka slice na. :-) try ko recipe ni sisjenny.

thanks mga sisses  i forgot to mention, before nio mix yung fresh milk, stir or pakuluan nio muna para mas maging creamy. madali lang gawin yng mixture. ang babantayan mo talaga is pag steam. ako sanay na kasi lagi me nagpapagawa sa min.

if steamer gamit nio (yng sa stove) and if layer or madami kayo gawa per llanera, make sure interchange nio sia (yng sa ilalim ilipat sa taas) vice versa. dapat pag nilabas nio parang jello pa sia kasi mag set pa sia pag nilagay sa ref.

You mentioned about pakuluan muna ang fresh milk,  does that mean once the milk has boiled, remove right away?  then let cool first before mixing with the eggs?

Also, kailangan pa water bath the baking dish in the oven or just bake the leche flan directly in the oven?

^ yes sis, once it boiled, remove it agad otherwise, aapaw sia. not necessary cool but let the milk evaporate lang by stirring then gradual ang pag lagay mo sa mixture hanggang maubos. stir mo lang ng dahan dahan kasi magbubbles pag mabilis.

if me bubbles pa din, i-glide mo lang sa bottom ng spoon yung bubbles para matanggal. para smooth yng leche flan. makinis.

to steam in the oven, put boiled water sa isang malalim na roast pan or kung san kasya yung baking dish mo. ska mo ilagay yng leche flan. dapat abot sa half ng baking dish mo yung boiled water para proper ang pag steam.

1/3 to 1/2 cup of sugar gamit ko if sa isang square pan (i use this when i bake brownies, i just measured them with my tape measure, it's 25cm x 25cm).

estimate mo lagn sis kasi makikita mo naman if sobrang dami at kapal sia once you spread it sa baking pan / dish mo.

May I know what's the ml in can you used for your condensed milk and anong brand na rin?

As for the eggs, should we beat it before mixing with the milk?  Or the eggs are beaten simultaneously with the addition of milk?

Hopefully, last question..  The eggs wont 'partially' cooked when the milk is still a little hot?  And we will just boil the fresh milk and not the condensed milk, right?

As for the eggs, should we beat it before mixing with the milk?  Or the eggs are beaten simultaneously with the addition of milk? no. i don't beat the eggs. just mix lang with condensed milk, and a teaspoon of lemon or vanilla extract. then gently stir them.

Hopefully, last question..  The eggs wont 'partially' cooked when the milk is still a little hot?  And we will just boil the fresh milk and not the condensed milk, right? - it wont get cooked once you mix the hot milk. if you want, boil the fresh milk first, then remove from heat and set aside. do the mixture na (eggs and condenced milk), para by that time, warm na milk mo.

ako naman, either I caramelize the sugar or totally, di ko na nilalagyan.  9 egg yolks, tapos i add 1 whole egg (kasama ang white).  then one can evap, one can condensed, konting patak ng dayap (optional).  then that's it.  sometimes, i add grated cheese above prior to steaming para medyo cheesy ang dating

just to share another one. leche flan with chocolate. ginawa ng hubby ko. he was curious was it like pag me chocolate. ang sarap and super smooth din sia.

tip: yung eggwhites na natira sa pag gawa ng leche flan, puede nio sia actually gawing omelette (sautee with garlic, onions, peas, bacon bits, tomato then eggwhite, season with salt and pepper)and brazo de mercedes (pag leche flan din ang filling). ;-)

^ sis, di ko alam kung pano ginawa ni hubby ha, kasi he was just trying something different that time eh. not sure if nagmelt sia ng semi sweet chocolate or cocoa ang ginamit.
