pahabol lang i baked the leche plan pala, and since i don't have the small lanera ba tawag dun? i just used my big round baking pan. dahil kaya dun kaya hindi nag totally caramelize yung sugar ko?

^baking pan din ginamit ko, pero square. malaki nga yung pan ko e, ang nipis tuloy ng leche flan ko, hehe. siguro dapat 8x8 or 7x7 lang.
ang ginawa ko, even ko yung sugar sa pan, 1/3cup lang ginamit ko. tapos habang preheat ko oven, nasa loob yung pan, para paguminit yun, magmemelt na din ang sugar. hehe.

umm... pwede po magtanong kung saan nakakabili nung mga llanera for the leche flan? yung small round ones po... Need ko po kasi to buy about 20 kasi i have orders po for my friend's canteen... Gusto nya yung ganun lang kaliliit... help please... :)

^the oblong ones na parang lata? i got those at divisoria, can't remember lang the street but its one of those small streets leading to divi mall.

ang best egg talaga to use for leche flan is itlog ng itik. kahit isama nyo pa yung egg white, smooth parin ang consistency. mas mahal lang talaga sha sa itlog ng manok pero if you come to think of it, mas makakatipid ka kasi you get to use the whole egg.

and much better kung yung milk is gatas ng kalabaw instead of evap. haha probisyang probinsya lang ang peg pero i swear by this. i you have the chance to get hold of these ingredients, try nyo mga sis  :)

@kutingkulilit ano yung exact recipe?  mabilis lang bumili ng itlok ng itik and yung gatas ng kalabaw meron na din sa weekend market pwede ba yung processed milk?

6 itlog ng itik (my tita uses 8, natitigasan ako... i like my leche flan kasi a bit creamy. if you want your leche flan on the firmer side, i suggest you use 8 eggs)
1 can condensed milk (large)
then sa gatas ng kalabaw, dun ko na din mini-measure sa can ng condensed milk, 2 parts.
so 1 part condensed, 2 parts carabao milk
1/2 cup sugar
1/4 teaspoon dayap rind (i even add a 2-3 drops of dayap juice, i forgot to mention this sa last post ko... mas malansa kasi ang itlog ng itik so for me this is a must. pwede din lemon rind/calamansi juice pero me the best ang dayap)

and don't forget to strain ha...

then the usual recipe of your caramel mga sis =)

I made leche flan recently based on a recipe from Kusina ni Manang's blog.  It's actually leche flan on top of chiffon cake.  What I liked about it is that it uses whole eggs.  I'm always worried when a recipe only calls for egg yolks or whites because I don't know what to do with the leftover!  This one's very easy to make :-) Here's what I made: http://undomesticatedhappiness.blogspot.com/2011/08/filipino-custard-cake.html

nakagawa na ako dati ng leche flan. pero hindi perfect. until i tried sis jenny_2284's recipe (from another leche flan thread). so easy and tastes good! creamy siya!

since im vegetarian, i know an eggless leche flan recipe (cheap pa!)  ;)
 
very easy lang:

1 can big evap (carnation)
1 can big condensed (alaska) or 2 small cans condensed
1 stick yellow dried gulaman (you may use 1pack yellow unflavored ALSA gulaman powder (if colorless, just add yellow food color), make the water 1/2 cup, instead of 1 1/2cups,and cook as directed in the instructions)
1 1/4 cups water
2tbps vanilla flavoring
2-3 leche flan tins (depende sa size)

1. combine evap and condensed in a medium pot, stirring occasionally (just so it wont stick on the bottom or burn) add vanilla. pagcombined na lahat and nagheat na, turn off heat and set aside for the next step

2.in a separate small pot, cut into pieces the gulaman stick with water. once nagsoften na the gulaman, put it in medium heat until natunaw na the gulaman completely. okay lang magboil, as long as matunaw lahat ng gulaman. turn off heat

3. with a strainer, pour the gulama/water mixture to the condensed/evap/vanilla mixture in the medium pot. stir until all combined. (you may add yellow coloring if gusto niong mas yello ang kulay)

4. pour on the leche flan tins with burned sugar on the bottom (or pour sugar syrup on top after inverted) and let set in the ref. turnover to a plate if alerady set

IF USING THE ALSA GULAMAN:

1. dissolve gulaman in 1/2 cup water
2. mix and let heat up, do not let it boil yet
3.add 1 big can evap, 1 big can condensed (or 2 mall cans)
4.boil for 5 mins and turn off. add 2 tbsp vanilla (or less depends on your preference)
5. pour on setting leche flan tins (with heated sugar at the bottom or pour sugar syrup on top when inverted) or tupperware and cool until set.

I made leche flan earlier. It's really yummy.. But the weird part was ayaw maluto nung isa.. Naluto lang yun sides but yun center ayaw.. I tried to set it pero lambot padin.. While the flan on the other llanera was perfect!  Sabay ko lang naman sila niluto sa oven  :-\

^I also bake my leche flan and the secret is to use two sizes of vessels for the llaneras.  Preferably put the large oven tray at the bottom of the oven and then put the smaller vessel on top of the oven rack at the middle of the oven.  This will allow for even distribution temperature and steam in the oven
1.  Preheat the oven for at least 10 minutes at 180 c
2.  While heating the oven, put the llanera on the smaller vessel.
3.  After 10 mnutes, put the large baking tray, that comes with the oven, at the bottom of the oven and then gently put the first llanera on top of the bottom tray of the oven. 
4.  Slowly pour the boiling water on the tray.  Make sure not to pour the boiling water into the leche flan mixture
5.  Put the stainless rack at the middle of the oven.
6.  Carefully slide the smaller vessel on top of the middle rack
7.  Slowly pour the boiling water on the tray
8.  Cook 25 to 35 minutes depending on the size of llanera.  For 15 minutes at 180 c and then reduce to 160 for the remaining cooking time.

DO NOT OPEN THE OVEN WHILE COOKING AT THIS REDUCES THE OVEN TEMPERATURE AND VENTS OUT THE STEAM but check the leche flan through the glass window from time to time.  leche flan continues to cook even after it is taken out from the oven.
