Baked Fish Fillet with Herbed Sour Cream and Parmesan -

-season dory fillets with salt and pepper
-dip/coat cream dory fillets in a mixture of sour cream, chopped garlic, chopped spring onions, salt & pepper
-arrange in a baking pan drizzled with a little olive oil; top with any leftover sour cream mixture
-top with grated parmesan cheese
-bake for about 15-20 minutes, or until the fish is cooked thoroughly
-sprinkle chives or chopped spring onions on top, if desired.

*you can add more parmesan on top and bake a little more if you want a really brown and crusty cheesy topping ;)

sisses may nakapagtry naba sa inyo ng fried dory w/hollandaise sauce?  wanna try it later sana kung okay kaya? =)

Here's my Parmesan-crusted dory recipe:

2 whole dory fillets
1/2 cup flour
1 cup breadcrumbs
1 egg slightly beaten
1/2 cup parmesan cheese
oil

Season dory fillets with salt and pepper. Lightly dredge in flour
In a bowl combine breadcrumbs and parmesan cheese
Dip fillets in beaten eggs and coat in breadcrumbs and parmesan mixture
Fry until golden brown on both sdes. Pat dry with tissue

FOR THS SAUCE (GARLIC MAYO DRESSING)

1/2 cup mayo
1 tbsp lemon or calamansi juice
1 tsp cooked garlic
salt and pepper to taste

@sis summer888: regular sinigang mix lang ang gamit namin. Drizzle with olive oil and bake for 35 min.

I tried this and it taste really good! I am so happy marunong na ako gumawa ng garlic dip! Yehey! Nagustuhan ng hubby ko kahit fried lang siya, he even helped in preparing this.

masarap din ang cream dory na after washing, pat dry with paper towel, season with salt and pepper, dip in egg then dip in japanese crumbs. deep fry. pair it with any soup like: crab and corn, nido, hot sour, corn or mushroom :D

saw this online & it sounds good esp. for those who love creamy sauces :D

PAN-FRIED JOHN DORY, CAULIFLOWER AND ROAST GARLIC PUREE

INGREDIENTS:
half a head of garlic
half a head of cauliflower, chopped
200mL full-fat milk
1 bay leaf
salt and pepper
fish fillets, lightly dusted in flour
vegetable oil for frying
asparagus
frozen peas

DIRECTIONS:
Roast the garlic, skin on, for 30 min at 180C until soft and browned.
Lightly simmer the milk and bay leaf. Do not allow to boil.
Add the cauliflower and simmer at low heat for 20 min or so until soft.
Puree with the milk and the roast garlic (skin removed) until smooth. Adjust seasoning.
Blanch vegetables in boiling water.
Pan fry the fish in hot oil, about 1-2 minutes per side until just cooked through.

I love Frabelle Foods Cream Dory, perfect for any fish dish! I use it in making beer battered Fish and chips! Yummy!

How do you prepare the fish before cooking? Kelangan ba talaga ibabad sa tubig or imarinate?  We've cooked this before fried in batter but it tasted really 'fishy.'

sis, chopped garlic yan imimix lang lahat ng ingredients ng dip. I don't think you can substitute any cheese with parmesan kasi you need yung powdery type para maging part ng breadings. Pag ibang cheese kc baka magmelt at di maging crunchy, haven't tried it though...  :D Pwede din isubstitute ang chicken breast fillet sa cream dory...  ;)

Sharing: Been doing this recipe for years especially pag drinking session kami sa house ni hubby and friends:

Kinilaw na Cream Dory:

1/2 kilo        fresh dory fish fillet, cut into bite-size cubes
Marinade:
1 tsp          fine salt
1/2 tsp      whole black peppercorn, crushed
1/2 cup     Datu Puti Vinegar
2 tbsp       calamansi juice
1 tsp          garlic, minced
1 tbsp        ginger, minced
1 pc            siling labuyo, chopped
3 stalks     spring onion, chopped
½ pc         red bell pepper, seeded and cubed
½ pc         green bell pepper, seeded and cubed
½ pc         green mango, cut into strips
1 tsp          Datu Puti Fish Sauce (patis)

Procedure:
1.    Sprinkle the fish fillet with 1/2 tsp of fine salt and 1/4 tsp of black peppercorn.
2.    To season the fish evenly, repeat the process on the other side of the fish fillet with the remaining salt and peppercorn.
3.    Add white vinegar, calamansi juice, garlic, onion, ginger and sili.
4.    Marinate in the refrigerator for one hour.
5.    Garnish with spring onion, red and green bell pepper cubes and green mango strips.
6.    Finish seasoning with Fish Sauce.

Thank you mga sis for sharing your recipes.

May nakita ako sa yummy, instead of using breadcrumbs, pinipig ang ginamit tapos tartar sauce ang dip nya.
