sis, i'm a pad thai addict through and through, kaya pad thai talaga ang sadya ko dun. :)   try searching for blog entries on chariya.  dun ko rin nalaman ang existence ng kainan na to.  sabi ng iba their tom yum is good daw; that's if you can handle the spicy taste.  not sure about their fish dishes, kasi di naman talaga ako fish person, and yung kaisa-isang thai fish dish na natikman ko before is not really to my taste. :D

Had dinner at People's Palace last night. I like the restaurant, it looks so modern and neat.

Anyway, we ordered Pad Thai, Green Chicken Curry, 2 Thai Fragrant Rice, Chocolate Cake, and 2 Thai Iced Tea. Total bill P1,500+. Dalawa kami and may leftover pa. Good for 3 siguro yung inorder namin.

I enjoyed the Pad Thai kasi its not soggy and the noodles are kinda rubbery, which I like. The Thai Iced Tea was oh-so sweet, I love! Green Chicken Curry was good, but not extraordinary. Best of the bunch was the chocolate cake topped with vanilla ice cream -- bittesweet, chewy, moist yet crumbly, chocolate goodness. A great way to end a lovely meal. :)

After taking Thai cooking lessons at 25 Mushrooms Kitchen, I can finally make pad thai, green curry chicken, tom yum goong, tom ca gai, chicken wrapped in pandan leaves, crispy catfish salad and other Thai dishes at home.  Madali lang palang gawin! ;)

In pad thai, the secret is in keeping the key ingredients authentic, like the tamarind paste.  And you must soak the rice noodles properly before cooking para tama lang ang firmness and texture niya.

I prefer the pad thai at Chariya and Mango Tree Bistro than that at Soms.

i don't know how authentic pad thai should taste pero pad thai from SR is good. heavy sa tummy! Pero medyo sweet siya na may time na babagalan ko pag kain ko para di maumay. I put chili flakes din para hindi "boring" yung lasa.. Ayoko kasi ng matamis lang. Gusto ko laging may "kick" yung lasa. Hehe

Pad thai is not supposed to be sweet.  Its base is tamarind paste and it is not sweet at all.   The reason probably why the pad thai here in Manila is sweet because most restos use white sugar instead of palm sugar in the sauce.  White sugar is a lot sweeter than palm sugar.  Palm sugar is not readily available here.  I only get it from the cooking school.

I got my very own kaffir lime na plant yehey!  Kaffir lime leaves are also essential in cooking several Thai dishes.

Pero if you are after an authentic Thai taste, palm sugar ang dapat gamitin.  This is one of the ingredients na binilin ko sa friend ko based in Bangkok na iuwi for me next time she comes home.

Cooking pad thai is basically stir-frying lang but you have to soak the rice noodles properly para hindi maging soggy at hindi rin naman matigas.  And siempre, you have to have the correct proportions of ingredients.  If you do not like maasim-asim, reduce the tamarind paste.  But sweet pad Thai is not really common sa Thailand.  The basic principle in Thai cooking is that there should be a balance of flavors: sweet, sour, salty, spicy.  Wala dapat mag-stand out diyan, like say, mas nangingibabaw ang tamis kaysa maasim, or vice versa.

Sa Salcedo Village market ko pinabili ang kaffir lime leaves.  Essential ingredient ito sa green curry chicken.

Other Thai essential ingredients: galangal (langkawas in Tagalos) for tom yum, cilantro, Thai fish sauce, curry, chili paste, lime, lemongrass, etc.

When buying Thai tamarind paste, green/red/yellow curry, etc. look for the Pantai or Mama something brand or yung may Thai characters.  I used to buy Thai Heritage na brand, but suited na daw yun for the taste buds of non-Thai people, so Pantai ang binili ko kasi sabi ng teacher sa cooking class, that is one of the brands you will find in a Thai home, just like Knorr or Lorins or Datu Puti here.   Sa Landmark ang daming Thai ingredients.

If you want to learn more about Thai cooking, check out the blog She Simmers.  The blogger is based in the US so she also mentions which Thai ingredients can be substituted by ingredients readily available in the US.
