here's my recipe

basil pesto:
2 cups basil leaves
2 cloves garlic
pine nuts
extra virgin olive oil
sea salt and freshly ground pepper
Parmigiano Regiano

lightly toast pine nuts.  cool
in a food processor, combine basil, garlic, pine nuts and salt & pepper. 
pulse until everything is coarsely ground. 
continuing to pulse, slowly add the olive oil, until you get the desired balance
check the taste
add freshly grated Parmigiano Regiano
serve with pasta, or crostini, or grilled chicken, etc.

If you are not using the pesto yet, don't add the cheese yet
you may freeze the pesto (minus the cheese) and just thaw to room temp when needed

here's another favorite pesto recipe

sundried tomato pesto

250g sundried tomatoes in oil
1 cup basil leaves
2-3 cloves garlic
olive oil (optional)
salt & pepper
parmigiano reggiano cheese (or any grating cheese like grana padano, pecorino romano)

combine sundried tomatoes (incl oil), basil leaves, garlic, salt & pepper in food processor. pulse.  (if adding olive oil, slow add the olive oil while pulsing until you get the desired consistency)
if not using immediately, stop at this point.  put pesto in freezer bag.
when ready to use, thaw pesto at room temperature.  add freshly grated parmigiano reggiano

last night, I experimented a variation for pasta:

1.  while penne is cooking, brown some minced pancetta
2.  remove pancetta pan from heat (dont transfer the pancetta to a plate anymore.  just let it sit in the pan with the oil renderred from pancetta)
3.  when penne is just 1-2 min away from cooking, add the sundried tomato pesto to the pan with the pancetta.  DO NOT turn on the heat
4.  once cooked, transfer penne to the pan with sundried tomato pesto-pancetta mixture.  turn on heat (lowest flame only), and mix the penne well with the tomato pesto-pancetta mixture.  turn off heat and transfer pasta to plate
5.  add freshly grated parmigiano reggiano

*in the past, I also tried parma ham (in place of pancetta).  It's good too, but I prefer the pancetta version since the crunch added a different texture

Here's my pesto recipe. I substituted Basil leaves with malunggay. Cheaper and mas madali hanapin. :) I purposely skipped the nuts part kasi hindi ko alam san kukuha nun.

^sis, if you want great pesto it's important that you use high quality ingredients.  i.e. unblemished basil leaves, good quality extra virgin olive oil, sea salt (kosher should also be acceptable), freshly ground black pepper, freshly grated parmigiano reggiano cheese.  Eden/quick melt are not considered "cheese", they are processed cheese food.  Kahit yung parmesan cheese ng Kraft (yung grated na nasa green bottle) - don't use that for your pesto.  if parmigiano reggiano is too expensive, grana padano is a good enough alternative.  basta don't buy grated parmesan - parmesan tastes best when freshly grated

Hi sis, I hope this may help. Siguro you can add din naman nestle.

CHICKEN PENNE WITH CREAMY PESTO SAUCE

For the sauce:
2 cups fresh basil
3 cloves garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
2/3 cup olive oil
2 tablespoons butter
2 tablespoons flour
1 cup milk
additional salt and pepper to taste

For the pasta:
1 pound penne
2 tablespoons olive oil
4 cooked chicken breasts, cut into 1 inch pieces
4 oz mushrooms, sliced
1/2 cup Parmesan cheese, freshly grated

1) In a blender, pulse together the basil, garlic, salt, and pepper. With the blender on, slowly pour in the olive oil until the pesto is thick and creamy.

2) In a saucepan, melt the butter over medium heat. Add the flour and cook for 2 minutes. Add in the milk and cook for about 5 minutes or until slightly thickened. Remove from heat and set aside.

3)In a large stockpot, cook pasta according to directions until al dente.

4) While the pasta is cooking, heat olive oil over medium heat in a large pan. Add the chicken and mushrooms and stir-fry for about 5 minutes.

5) When pasta is done, drain and add to chicken and mushroom mixture.

6) Mix the pesto into the cream sauce. Add parmesan cheese. Add additional salt and pepper to taste. Pour sauce over penne and chicken.

I'm glad I stumbled upon this thread.

I still have sun-dried tomatoes leftover from a spread that I had made.  To try your recipe, should I just 'soak' the dried tomatoes in olive oil?  I'm looking for recipes to put them to use kase. :)

@ sis FABems, if you want good pesto  use real parmesan.  for me, unacceptable ang processed cheese food (i.e. eden cheese and the likes).  Parmigiano Reggiano is the best choice, but quite pricey at P200+/100 grams.  Grana Padano is a good enough alternative, at P100+/100 grams.  and dont buy your parmesan grated, most of the flavors would be lost already.

@ sis happy_pomelo, have not tried using dried version of sun-dried tomatoes.  I always buy the sun-dried tomatoes in oil.  yun kasing 'in oil' that I buy from Santi's, may mga kasama pang hersbs yung oil.

TUNA AND SPAGHETTI WITH PESTO SAUCE

Needed:
Pesto (Bottle) available at Supermarket
Lite All Purpose Cream
Evaporated Milk
2 cloves garlic, crushed
Century Tuna, drained (you can also use Corned Tuna)
Spaghetti or any type of Pasta
Parmesan cheese

1. Saute garlic and add the tuna
2. Add all purpose cream, evaporated milk and pesto
3. Cook spaghetti according to package directions; drain and rinse.
4. Pour sauce over pasta and toss lightly to coat thoroughly.
5. Serve with additional Parmesan cheese

i wanna learn how to prepare this kasi i love pesto (either in pasta or sandwiches :P)... since I dunno how to make one pa (I should learn soon!), I'm eyeing on buying Bravo's bottled pesto sauce which I saw in Rustan's supermarket.

^ we tried the kung pao sauce and its so good! Kaya i wanna try the pesto rin since love ko pesto :)
