Mga sis, no offense sa mga carbonara recipes nyo but I just wanna share the real traditional Italian carbonara sa Tuscany. Actually, sila walang cream ang carbonara nila kasi nga masyado silang conscious sa calories considering may egg and bacon na nga na kasama. But well, taste is subjective but for those who want to try, eto ang recipe nila, wala lang measurements kasi estimation lang ang gamit ko.

Spaghetti or Bucatini (this is the suited pasta for this sauce)
Bacon
Onion
Egg yolk
Pepper
Salt
Pecorino cheese

So here it goes, first prepare the sauce. Chop the onion into smallest pieces. Chop the bacon lengthwise, depende kung gaano kakapal gusto niyo but ako medyo mas malalaki sa size ng chopped onion.

Sauté the onion and bacon bits in olive oil until the bacon bits are crispy. Set aside.

Boil some water with salt! (taste the water and make sure na may lasa). Put the pasta kapag kumulo na then wait until it cooks. Better kung al dente kasi lulutuin mo pa ulit ito with the sauce. Drain.

Pour the sauce into the pasta and cook in LOW fire. Stir consistently. Put salt if still needed. Then, add the separated egg yolk into the pasta. Stir. Add some pepper. Your "low calorie" spaghetti alla carbonara is ready. Serve with pecorino or parmesan cheese but ang talagang partner is pecorino cheese. Ewan ko lang kung san meron nun dito sa atin.

Try it para maiba naman dun sa usual creamy carbonara.

wow! i badly need this recipe! my bf's birthday is coming and carbonara is one of his fave so i was planning to cook one for him. kaso ang daming recipes! hindi ko alam ano ang gagamitin ko. naguguluhan ako kung mas masarap yung may evap pr wala? ano po ba? yung malasa? and hirap mamili since hindi ko ma nata-try. may free taste ba dyan kada recipe? haha! mga sis, ask ko narin po pala how much ang budget pag magluto ng 1kg na carbonara? saka hindi ba nagbabago yung texture niya? since im going to cook it ng umaga sa house namin then saka ko dadalihin sa house nila by afternoon pa yun. im not sure kung may microwave oven dun kasi hindi na siya natitirahan. pero may gas naman saka other kitchen utensils. or gano katagal bago ma-spoiled yung sauce? thank you po

i think medyo too late na yung reply anyway, share ko na lang rin...

para mas maging malasa yung carbonara niyo :

you can used cooking cream ( pwede na rin yung all-purpose cream)

then cook your bacon (hayan niyo lumabas yung mga fats niyo) wait until meydo crispy then set aside reserve for garnishing.

using the fats of bacon, saute some onions, lots of garlic( i love garlic kasi) ham ( you can also add prosciuto), mushroom, some bellpeper ( red and yellow to add some color and flavor). then add some butter and flour ( butter and flour helps thicken the sauce)
then gently add the milk and cream, stir constantly. then add some bouillion, let its simmer for few min. add some Fresh sweet basil leaves or thai basil, and parmesan cheese ( you can also use other kind of cheese like cheddar cheese, edam,so on...) then let it simmer again for few min, to thicken the sauce. pag sobrang yung pag thicken ng sauce just add some milk until umabot siya sa tamang consistency..

when serving.
 put the sauce over the pasta. then sprinkle the bacon bits and grated parmesan cheese then put the fresh basil leave:) yummy heheh

nakakagutom nga talaga tong thread na ito  :D i wonder paano lutuin ang carbonara/alfredo yung tipong hindi nagswi-swimming sa sauce yung pasta? yung parang dikit dikit sila, paano kaya mga sis? TIA

My honey's fave carbonara err alfredo recipe:

Ingredients:

- bacon (fried and cut into bits)
- garlic
- onion
- ham (cut into squares)
- 1 can of Campbell's Cream of Mushroom
- 1 can of Nestle All Purpose Cream
- salt and pepper to tase

1. Fry bacon until brown then set aside
2. In a sauce pan, saute minced garlic and onion
3. Add in the ham
4. Once ham is cooked, add in the cream of mushroom
5. Simmer
6. Then add in the all purpose cream
7. Stir occasionally
8. Salt and pepper to taste
9. Add water as needed if sauce is too thick

Pour sauce over pasta (per serving only not on the whole pasta itself) and top with grated cheese. For me, I even put in the microwave oven just to melt the cheese...Hmmm Yummy!


thank you for this recipe.  Tried it yesterday, and my hubby liked the end product.  Be careful lang with the salt, though, napa-alat yung timpla ko.... :)

8-12 thick slices of Italian bacon
4 eggs
2 packages of spaghetti
2 cups grated parmesan cheese
In a frying pan, combine 1/2 inch of olive oil, 2 cloves of minced garlic, one chopped onion and the Italian bacon cut into small squares. Let simmer for about a half-hour, being careful not to let the oil get to a boiling point.

In a bowl, beat 4 eggs with lots of salt and fresh ground pepper.

Bring a pan of salted water to a boil. Cook both packages of spaghetti until al dente, drain and immediately add egg mixture to pasta. The eggs are actually cooked by the pasta. (Make sure the eggs are thoroughly cooked before proceeding.) Stir the egg mixture until it is well mixed. Pour in the mixture from the frying pan and stir. Finish with the parmesan cheese and serve!

Except for the parmesan cheese, this is the authentic Italian carbonara. Pecorina cheese is the one used for carbonara in Italy.  ;)

Sis...i tried it last nite...love it.  My daughter doesn't like any food na may cream...

parang yummy nga yung eggs ang gagamitin..pero parang masarap din yung recipe ni sis xymone :)
