How to get new cat to play with toys?

My partner and I adopted a 9 year old cat 2 weeks ago. He's really sweet but shy and has been making progress getting more comfortable with us but is very nervous and jumpy, though I know that'll pass with time. The problem is, his previous owner never even tried to play with him. He was mostly an outdoor cat and would chase mice. We keep him indoors as we don't feel comfortable keeping cats outdoors. But I want to make sure he gets enough playtime. I got him corrugated cardboard, balls with bells in them in a circular toy, and a toy on a stick & string. But all of the toys kind of scared him. He doesn't know how to play yet.

So basically I'm asking, how can I introduce play? What toys are good for cats that enjoy chasing mice? And when is a good time to start playing with him? Is it too soon; should I wait until he feels comfortable in the house? Any advice helps. I've never had a cat before and I want to give him a good home.
