How to gain weight as someone with difficulties eating?

Hi there. I'm in need of ways to gain weight as someone with some form of arfid (avoident/restrictive food intake disorder). This issue arises in two ways for me:

it is near impossible to add variety or change the form of what i eat (i.e i can eat fries but not potatos even though they are essentially the same thing) which has led to a lot of limitations in the types of food i can eat. Previous attempts to challenge these issues just ended up with me breaking down. Im unsure as to whether this is a sensory problem or something else. Though there have been rare times where I've been pleasently suprised.

there are fluctuations in the amount I'll eat over given periods of time. This at time goes to the point of going a day without eating though there are not times where I'll eat more than 3 relatively small sized meals.

If theres any further information youd need to help me out just let me know and I'd be happy to add it. Thanks if you've read this far. Im not quite sure if this is the sort of content this subreddit is for but I figured you were probably my best bet.

I share it with you. I used to have anorexia and I felt nauseous when I ate anything. I feel so sad. I can only think that you can try different foods to find what you like. Although I see a lot of places advertising food that promotes appetite, I'm not sure if it works.
