Destination Wedding questions? Tips? Suggestions?

Beginning to plan our wedding...we were engaged in Jamaica so we're leaning either towards destination Jamaica or Mexico. We just want something smaller, fun and not terribly expensive.

My question for any of you that might know--a lot of the Mexico wedding packages say the ceremony's are done in Spanish and then translated to English and that has been making me not want to do it in Mexico. Have any of you made it so that it was in English? Also, if I end up being legally married first in the US that should change a lot of requirements for destination weddings correct? Can anyone offer me some guidance?
