Hi sissies!

Newbie po sa cooking. I'd like to ask for your simple pasta recipe (no need for carbonara) so i can cook for my husband. Mahilig kami kumain pero di pa ganun kaOK magluto. Sana po yung madali lang muna para mapractice ko hehe.

Thanks po in advance sa inputs nyo!:)

Spicy Shrimp and Spaghetti Aglio Olio (Garlic and Oil)

1/2 kl shrimp, peeled and deveined
1/4 cup (4 turns around the pan in a light stream) extra-virgin olive oil
6 to 8 large cloves garlic, crushed and minced
1/2 teaspoon crushed red pepper flakes (put a little if you are not into spicy)
1/4 cup finely chopped flat leaf parsley, a couple of handfuls
Coarse salt
Pepper
1/2 kl spaghetti, cooked to al dente

Heat a large, nonstick skillet over medium high heat, then add the shrimp. Cook shrimp 3 minutes until pink and just firm. Remove shrimp to a platter.

Return pan to heat and reduce heat to medium low. Add 1/4 cup extra-virgin olive oil., garlic toast a little, and pepper flakes to oil.

Reduce heat to low and toss the cooked spaghetti in the pan. Add back the cooked shrimps. Then season with a little coarse salt and pepper to your taste.

(You can also add or substitute with the ff: cheese, bell pepper or cherry tomatoes or anchovy or asparagus or chicken... any variations will do depend on your taste and preferences)

Spicy tuna pesto na staple din namin sa bahay:

Century tuna hot and spicy
Basil pesto
Garlic
Olive oil
Black olives (pitted and sliced)
Half a lemon
Pasta (kahit anong klase will work except angel hair kasi masyadong manipis)

Drain most of the oil from the tuna can/s. Saute garlic in olive oil. Add tuna, then olives. Mix in pesto. Add more olive oil if you like. Mas maganda mejo madaming oil para hindi dry yung pasta. Salt and pepper to taste. Squeeze lemon over the sauce pag malapit na matapos. Toss in cooked pasta.

^I don't have measurements of each ingredient. Adjust lang ako if I'm not happy. This is just the base.

Olive oil, mashed tomatoes (see below), lots of garlic and onion, 1 can of tomato paste or tomato ketchup/sauce, fresh herbs (basil or parsley or both), 1 tsp of lemon juice or vinegar, brown sugar 1 tsp or tbsp, bay leaves, water, salt and pepper to taste

Mashed tomatoes - take out the core and the seeds. Put in boiling water until you can see a slight peeling of the skin, then place in iced water. Start peeling.

Instead of boiling, another way is painitin ang kamatis above the stove or grill for a smoky taste, like what you do with the eggplant when making relyenong talong.

Mas madali and mas masarap ang canned peeled tomatoes than fresh.

^^ not sure if pwede ito dito. May natikman akong shrimp carbonara sa isang party na napuntahan ko. And i must say, sobrang sarap. Di ko malimutan yung lasa nya parang bigla ko syang naging standard when it comes to carbonara. Meron na kayang nakapagluto nito dito? Care to share the recipe? Thanks ;D ;D

Favorite ko ngayon, aligue pasta with shrimps:  gisa garlic and onions, add the aligue, then add cream. tapos add prawns.  adjust the taste with some lemon juice, dill, salt, pepper.   Tapos add the pasta (better is noodles such as tagliatelle or spaghetti).  Sarap!  Favorite ko syang pasta at the moment.
