"HEALTHY" ARROZ CALDO:

Just substitute the rice ingredient below with OATMEAL. You'd be surprised it's super tasty.

At first you'd thought "yucky, oatmeal?arroz caldo?" pero once matikman nyo na you'll love it.

TIP:
Wag nyo munang sabihin sa nilutuan nyo na oatmeal ginamit nyo, they'd be surprised and impressed after they find out ;)

^ sis it's been a long time since i last cooked chicken arrozcaldo ;D hmmm crave tuloy ako nito ;D here's a very easy-to-do recipe :)

Arroz Caldo
Note: This recipe is from Reynaldo Alejandro's Philippine Cookbook

3 tablespoon vegetable or corn oil
2 tablespoon minced garlic
1/4 cup chopped onion
8 1/2-inch slices of ginger
1 2 - 3 1/2 pound chicken, cut into serving piecies
4 tablespoons patis (or 2 tablespoons salt)
6 cups water
2 cups uncooked rice
1/4 cup chopped scallion
1/4 teaspoon freshly ground pepper

In a large covered stockpot, heat oil and saute garlic, onion and ginger. Wait for the garlic to turn brown and onions become transparent.

Add the chicken and patis or salt. Cover and let simmer for 5 minutes. Chicken will produce its own juices.

Add water and rice. Stirring often to prevent sticking, simmer for 25 minutes over low heat or until chicken and rice are tender.

Add chopped scallion and pepper before serving.

I also like to add fresh lemon, lime or calamansi juice before eating.

Champorado
1. Pakuluan tubig and malagkit na bigas.
2. Pagkakulo, ilagay ang cocoa. Tanchahin.
3. Timplahan ng brown sugar according to your taste buds.
4. I-serve with evap on top.

Almondigas Soup

Ground pork (get the lean version)
Minced shallots
Minced carrots
Minced garlic
Salt
Pepper
Knorr seasoning
Chicken stock or chicken cube
Misua
Green onions
Shredded cabbage

Directions:
1. Mix the first 7 ingredients and form into small balls, set aside.
2. Bring chicken stock to a boil or dissolve chicken cube in water, as directed. Once stock is boiling add the meat balls into the broth. Continue to simmer until meat balls are cooked.
3. In the last 5 minutes of boiling add the misua.
4. Turn off heat & add shredded cabbage
5. Serve with spring onions sprinkled on top
