It's like regular oven pero mas mabilis ang pre-heating at usually offset ang temperature nyan ng 10-15°C kaya dapat meron ka lagi oven thermometer sa loob.
Pag stable na yung temp reading sa thermometer, doon ka magrerefer, wag sa dial ng oven mo. :)

Turbo Tinapay naman. :)

nag try akong mag bake kahapo sa american home electric oven ko, kakatuwa kasi success yung revel bar na ginawa ko :)

this is my first time to bake, first time ko ring gumamit ng electric oven at nakakatuwa! :)

I bought my turbo at Imarflex Showroom in Buendia, near Gil Puyat LRT1 station. I think they have spare din, naalala ko nakita ko noon. :)

Pwede bang mag-sell dito? Plan ko na kasi ibenta iyong turbo ko kasi I want an electric convention oven na e. Imarflex sya, 5 months palang (bought October 2012), pasok pa sa warranty.

Ayoko naman din kasi na if bibili ako ng elec. oven e ma-stuck nalang dun yung turbo kasi mas gagamitin ko na yung elec. oven. PM nalang for anyone interested. :)

Heto yung recipe ko sa Turbo Cinnamon Rolls base. Medyo mahaba yung post pero isinama ko kasi yung personal notes kaya humaba pero madali lang ito. :)

Cinnamon Rolls (yield: 10-12, depending on how many you want to divide your dough)

Ingredients:
BREAD:
1 c               scalded milk
2 1/4 t        yeast (I use Eagle instant yeast from Ferna)
1/4 c           warm water
2T plus 2t   sugar
2T plus 2t   veg. oil
1 1/2 t        b. powder
1 t              salt
1/2             egg, lightly beaten (I use 1 small egg nalang here)
3 1/2 c        a.p. flour or bread flour

FILLING:
2T             softened butter (not melted)
1/4 c          sugar
2 1/4 t       ground cinnamon

Procedure:
In a big bowl, mix instant yeast, sugar, b. powder, and flour in a bowl (instant yeast doesn't need to be proofed beforehand).

In a smaller bowl, mix warm water (warm enough but does not hurt your skin), veg. oil, egg, salt. (Salt cannot be in contact with the yeast directly or else the yeast will die.)

Lightly simmer (in other cookboks, this is called 'scalding') the milk over low fire until small bubbles appear. (Scalding the milk helps keep the bread soft).
Allow to cool just until warm (same with the warm water, yung hot enough but doesn't hurt you. Kasi if it's too hot, it will kill the yeast). You can use the microwave for convenience but I don't like using the microwave because some studies say it sucks out the nutrients of the food you reheat in it.

When milk has slighty cool down to just warm temp, mix to the flour mixture. Then mix in the water+egg mixture.

Mix together with a fork or wooden spoon ow with celan hands until just combined and you form a soft dough that pulls away from the sides of the bowl. Let rest 10-15 minutes to relax the gluten.

After resting the dough, turn it out on a clean dry surface dusted with little flour. (Ako, I just knead the dough in the bowl mismo kapag tinatamad ako magknead sa flat surface, hehe). Do not dust too much flour or else the bread will be tough, dry, and too dense.
Knead the dough until smooth and elastic, about 10-15 minutes. After kneading, shape into a ball and place in an oiled bowl so that the dough will not stick.
You can use the same big bowl where you mixed the ingredients so you have less stuff to wash after. Cover with a clean warm towel/cling wrap and let rest in a warm place for 45min-1hr. This is the first rise.
(I use a clean unused shower cap which I just use only for this purpose so I won't have to use cling wrap all the time. :) )

Mix the softened butter, sugar, and cinnamon. Set aside.

After the first rise, lighty punch the dough to release the gas inside. Turn out into a lightly floured surface, then roll out into a large rectangle with a rolling pin or a clean smooth roung bodied glass bottle.
(I don't measure mine, basta maging 1/4 inch thick yung dough. You can also divide the dough into two, work with the 1st half and then return the 2nd half back to the covered bowl so it will not dry out.
I do this when I make one batch and it yields to 8 big rolls of 2 batches of 8 medium rolls, depending on what baking pan you use.)

After rolling out the dough, spread the filling on the surface, leaving half an inch around na walang filling. You can get creative with this part and place whatever filling you want or have on hand.
Ex: peanut butter and strawberry, chocolate spread, nutella, dust more cinnamon, sprinkle a little bit of nutmeg (I strongly suggest nutmeg, really good! hehe).

When done spreading your filling, roll the dough tightly at the same time tucking in to keep thr filling intact. Pagdating sa dulo, pinch the edges to the main dough to seal, you can also use water or milk to glue the edge to the roll.

Then slice your log dough into 8-10 rolls (again, depending on the pan you have) place in a slightly greased pan sliced face up, let rest/rise until double in size. This is the second and last rise.

Preheat your oven to 350F/170C 110-12minutes before baking. Bake the rolls for 35-40 minutes until golden brown. If the top begins to brown too soon, cover it with another pan or foil.
Or either cover the rolls with foil and then remove for the last 10-15 minutes of baking time. When done, let cool in pan for 10-15 minutes with the oven door slightly opened. Then take out from the oven.

You can enjoy your rolls while still warm or let it cool completely. You can also opt to make a simple glaze (8T confectionaire's sugar dissolved in 1/2 to 1T milk or water) then drizzled on top.

I placed a clean granite tile at the bottom of my turbo broiler para dagdag heat at mas stable temperature. I made pizzas last Sunday and okay sya, hindi soggy yung pizza crust. :)

Extension ring ito. Pang-dagdag volume sa loob if ever malaki ang niluluto or like kung malaki yung manok. In my case, para hindi masyadong mainit or kumbaga madagdagan yung space kung saan magfflow yung hot air. Kasi kung sobrang liit ng  space para sa hangin, tendency is masunog kaagad or kung maluto man, hindi masyadong mag-rise kasi mamamatay agad yung yeast sa sobrang init.

Kung yung takip naman ng springform pan, yun yung base ng fluted pie pan na natatanggal. Ginagamit ko narin pantakip ng cake pan kapag hindi naman ako gumagamit ng pie pan. Para mas even yung heating sa loob ng cake pan at hindi masha-shock sa change of temp kung sakaling buksan mo yung turbo, kasi madaling bumaba yung temp once buksan mo sya.

Wag ka matakot sa yeast. Ang secret dyan para hindi mamatay, lagi nyo tandaan ito:

1. Huwag sobrang init ng liquid na gagamitin sa recipe. Kung may food temp reader kayo, it's 105-115degF. Kung wala, the simplest guide is between hot and warm, yung mainit pero hindi ka masasaktan. If you have/had babies, remember yung lalagyan nyo ng milk ng baby sa wrist to check if hindi mapapaso si baby? Ganun yung technique ko. Just hot enough pero hindi nakakapaso.
How about room temp water? Pwede di naman kaso lang kakailanganin mo ng longer rising time para mag-activate sya. Kung hindi kayo nagmamadali, pwedeng ipa-slow rise nyo sa ref (not freezer or chiller) yung dough. And slow-rising the dough is nakakatulong sa pagka-soft ng dough. Pero with ganitong overnight rising, nadedevelop yung yeast flavor kaya kung ayaw nyo ng masyadong ma-yeast na bread (some kids and even adults don't like it), stick nalang sa 1-2hr rising period.

2. Huwag direct contact ang yeast sa salt kasi mamamatay din yung yeast. Pwedeng ihalo na sa liquid yung yeast para dissolved na sya once it makes contact with the salt.

Nga pala, kung magpapa-slow-rise kayo sa ref, huwag air tight yung takip kasi mag-eexpand parin yung dough kahit malamig yung environment nya. When I do slow-fermenting my dough, pagdating ko sa umaga naka-angat na yung takip.

Remember about getting creative? Same bread recipe lang nito ang ginamit ko. Sa filling lang naiba.
Apple Raisin Pull Aparts filling:
applesauce (simmered in slow fire and add sugar. maasim kasi ang pure applesauce.)
raisins
cinnamon powder
nutmeg powder (medyo matapang ito. start from konte then andjust to suite your taste. If you can't recall that nutmeg is, ito yung nangingibabaw na flavor na nalalasahan nyo sa Choco Butternut ng Dunkin Donuts. :) )

Then alam mo na, roll ad tuck tight. Kapag tapos na, brush ka ng applesauce sa ibabaw then sprinkle konting cinnamon, kung may natira pang raisins, optional din yung roasted sesame seeds. Bake ka na ulit. :)

I use nga pala SAF GOLD instant yeast, P140@500g.

It's made for sweet breads and baked goods na mataas ang ratio ng asukal sa flour. Pero nalaman ko lang na pang-sweet bread ang Saf Gold pagkatapos kong mabili at nasubukan ko na gumawa ng pizzas using this flour (Eagle instant yeast and gamit ko dati).
In fairness, malambot ang dough at mas smooth sa pakiramdam habang minamasa yung bread dough.
And also use bread flour for breads, and consequently, cake flour for cakes (pwede naring all-purp).

I buy my bread flour sa palengke lang, P40 per kilo. They call it "first class" flour.
Wala naman kasing bread flour sa supermarkets. Pero kung may budget kayo sa branded, like the ones from Baker's Depot (I remember it's P56/kilo), then by all means use the branded. :)

Ang breads pala okay lang hindi i-sift prior to using. Sa cakes ginagawa yung pag-sift para maging airy and light. Pero I do sift my flour parin before transferring to a big container just to strain out and to see if may u.f.o. na andun. hehe.

Eto rin palang Mango Pan de Coco, using the same base recipe as the cinnamon roll, pero ang filling is mango puree, desiccated coconut, and konting butter.
And technique na ginawa ko is flatten the cut dough then lagyan ng filling and seal (parang kung paano ginagawa ang sipao).

Great job! See, di kailangan matakot sa yeast. At hindi kailangang chicken lang ang niluluto sa turbo nyo :) Ituloy mo lang yan, then you'lll get the hang of it. Napakaraming pwedeng gawin with that single bread recipe. :)
Actually pwede mo narin pag-aralan ang mga basic like pan de sal, spanish bread, ensaimada.
And your carrot bundt cake looks good! I bet kasing yummy rin. Cream cheese ba yung sauce nya? :)

Pwede na i-bake na pahaba pero syempre pabilog lang ang kaya ng turbo natin, hehe. Since versatile yung recipe, I used coconut milk kasi last night wala akong normal na milk. And I tried ommiting the egg para di masyadong egg-y yung tinapay part. Masarap parin pero ang main taste nya is yung tea, yes, yung laman ng tea bag na ini-sprinkle ko sa gitna after ng butter.

Remember, you just have to get creative lalo sa filling and execution (pwedeng rolls, pwedeng filled buns, pwedeng pa-croissant, braided, etc!).:)

Natuwa ako sa braided bread kaya umulit ako, hehe. Altho hindi ko natikman ang finished product kasi dinala ng mama ko for her workmates.

Version 2.0:
Chocolate bread dough. Filled with dessicated coconut and chocolate covered-almond nuts, sprinkled with a little sugar and nutmeg

Same cinnamon bread recipe but i took out about 1/2c of the flour and replaced it with cocoa powder. :)
