Question!! Kapag ba super moist ng cupcake, to the point na humihiwalay siya sa cups ibig sabihin masyado naover mix? Kasi yung choco cupcakes ko, ok naman ang lasa, malambot and hindi dry pero pansin ko, madali siyang mahiwalay sa cups (paper)

good am everyone. What a life.... ;)

I made vanilla choco cupcake from yummy mag yesterday, I used cake flour (marami kasi akong stocks nito hehehhe) instead of apf mas malambot nga & hindi masyado umalsa ang cupcake ko, here's the recipe. i also used the vanilla buttercream frosting, too sweet nga lang.  Anong kind ng icing or frosting ang hindi masyado matamis at  pwedeng i match sa kahit anong cupcake flavor. Lalu na kung red velvet. thanks sa mag reply. :)

Choco-Vanilla Cupcakes
By: Nadine Abraham


Bake these over the weekend and let the aroma of th delicious chocolate cupcakes lure the whole family to the kitchen. You can further dress the cupcakes up by placing candy sprinkles or dragees on them.
Yields 12 regular cupcakes Prep Time 10 minutes Baking Time 15 to 20 minutes
 
1/2 cup butter, softened
1 to 1/4 cups sugar
2 large eggs
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup milk
1 teaspoon vanilla

For the Vanilla Buttercream frosting:
1/2 cup butter, softened
2 cups powdered sugar, sifted
2 tablespoons milk
1 teaspoon vanilla
food coloring of your choice
 
1 Preheat oven to 350F.
2 Beat butter until softened. Add sugar and beat until light and fluffy.
3 Add eggs, one at a time, beating until well combined.
4 Measure and combine flour, baking powder, baking soda, salt, and cocoa powder in another bowl.
5 Measure and combine milk and vanilla in another bowl.
6 Add about a half of the dry ingredients to the butter and sugar mixture and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.
7 Scoop batter into cupcake liners. Bake cupcakes for about 15 to 20 minutes or until a cake tester comes out clean.
8 For the frosting, using a hand mixer, whisk the butter for 3 minutes while slowly adding the powdered sugar. Slowly add milk then vanilla. Add more milk if needed. Add a few drops of the food color until you reached your desired icing color.
9 Ice your cupcakes.

mga sis i would advise na bumili din kayo ng oven thermometer if wala pa kayo. I am using the same kyowa oven for 6 months now. Kahit nakaset sa specific temp. mas umiinit kasi kaya nasusunog ang cupcakes ko.

Bumili ko ng oven thermometer para malaman ko if babaan ko pa nakaset na temp. ng oven.  Happy naman ako sa results eversince nagkaron ako ng oven thermometer. Happy baking!

Mga sis ano ang problema pag matigas ang kinakalabasan ng mga binebake nyo?

I tried to follow naman instruction, at [textspeak!] convert ko pa mga cups to grams sa measuring cup but palaging matigas ang outcome. I baked cinnamon roll, red velvet at crinkles.

Napu frustrate na ako hehe.
Over cooked ba yun? Kulang or sobra sa flour? Pano ko mapapanatiling malambot?

^^sis, maraming pwedeng maging factors eh.
in my own experience, pinakamadalas na matigas ang result ng ginagawa ko kung overbaked. :(
minsan naman, sa recipe mismo o kaya sa oven. tulad ng oven namin, parang may sariling scale na ang tawag eh S scale. S for secret. :D kahit kasi ilagay ko sa 160, parang ang bilis pa rin magluto. hehe.

@icee star- either over mixed ang batter or over baked (pag masyado mataas temp ng oven or masyado matagal ang baking time) nakakadry and nakakatigas ng cupcake.

cinnamon roll - either sobra sa flour or kulang / sobra sa knead
red velvet - pwedeng na overbake kaya matigas. pwede ring na overmix.
crinkles - overbaked din. kakagawa ko lang ng crinkles nitong new year. yun last batch (buti na lang 6pcs lang) naiwan ko sa oven pagka off ko, ayun, cookies ang kinalabasan hehe.

map-perfect mo rin yan sis.  ;)

share ko lang yung sakin, maybe one factor bakit di aalsa ng maayos pag hinde enough yung batter sa cupcake pan. natry ko magbake ng banana cupcake na puno yung takal sa ice cream scoop at yung konti lang balak ko kasi damihan kasi papamigay ko, so yung batch na konti lagay ng batter sa cupcake pan hinde gaano umalsa. hinde ko na inulit pag tamang takal maganda pagkaalsa.  :)

@icee_star- with regards to cinnamon roll madaming factors kaya tumitigas yung bread. Pwedeng kulang sa knead, kulang sa resting time, too dry yung dough (sobra sa flour). What kind of flour did you use? Mas ok kase pag bread flour talaga gamit kase it has higher gluten content than all purpose.

gumawa din ako ng cupcakes give ni hubby sa mga friends niya sa office I used vanilla bourbon from vanilla company (expensive nga lang ito) masarap daw.

kaya next time try ko na lang gumawa ng sarili kong vanilla extract. ;)

Ehhh, gusto ko matuto magbake ng cupcakes kaso wala naman kaming oven na malaki and ideal for baking talaga. :(

kaso yun nga, mabilis magmelt. i chilled it sa fridge before ko nilagay for cupcake frosting, mga 30 mins lang nagstart ng lumambot (although di pa sobrang nagmelt pero papunta na dun) :D

sis i want to try that recipe from bake happy also, anong cocoa powder ginamit mo? dutch processed or hindi?

yang frosting mo natry ko na rin yata, may cornstarch din yung nagawa ko http://www.wilton.com/recipe/French-Buttercream-Icing-1 madali mag-melt and masyado matamis kaya nag-grate ako ng tablea para maging chocolate buttercream, ayun nabawasan naman yung tamis...
