2520 binayaran ko, pero 2800 talaga meron lang silang 10% discount. Meron uli sila class this Oct.13, sayang nga kasi saturday class yun at 15% discount pa! sayang talaga kasi nakapagpa-reserve na ako ng slot eh kaya kakahiya naman di umattend.

eto yung icing na nagustuhan ko:

ROYAL ICING
Ingredients:
3 tbs Meringue Powder(Ovasil)
4cups sifted powdered sugar
6-8 tbs Water
1/4 tsp Vanilla Powder

Procedure:
1. Combine powdered sugar and meringue powder in a mixing bowl.
2. Gradually add water(initially add 4 tbs) while mixing and add 1/2 tbs at a time until peanut butter consistency is achieved.
3. Color with gel-based food color if desired.
4. Spoon icing into a piping bag and use to decorate cupcakes, cakes or cookies.

yung pag-mix medyo matagal nya ginawa sa mixer yun eh, parang nasa 10minutes yata kaya ang ganda ng pagka-pipe nya talagang di nag-melt.

SIMPLE BUTTERCREAM FROSTING

INGREDIENTS:
2 bars unsalted butter, room temperature
1 cup sifted powdered sugar
3 tbs full cream milk(she used alpine but any evap milk daw will do), room temperature
1/2-1 tsp lemon extract
1/2-1 tsp vanilla powder

PROCEDURE:
1.Cream butter until smooth, gradually add in sifted powdered sugar
2. Pour full cream milk until a spreading consistency is achieved
3. Add desired flavoring
4. Top on ensaimada, cupcakes or cakes. May also be used as a filling.

 yun royal icing, tumitigas talaga yan. nakagawa na ko nyan dati para sa christmas cookies na pinang regalo ko.

yun sa buttercream, anong butter ginamit nya? as in di talaga sya madali nagmelt? yun buttercream na nagawa ko dati ganyan din recipe pero ambilis lumambot e. :(

i think the secret is whipping it vigorously on a mixer. nope, hindi sya natunaw, matagal din nya eto minix sa kitchenaid. ako pa naman pag nag-mix ng icing eh mga 3-5mins na yata pinakamatagal, patigil tigil pa dahil nangangalay na ako sa hand mixer ko, haha. dapat pala dirediretso talaga, then scrape lang from time to time yung sides ng bowl para mahalo maige...

mag-add pa ako ng recipe, maya-maya na lang kasi dito ako work..haha

wow, thanks for sharing sis virgogirl! :) ngayon ko lang nalaman na may vanilla powder pala, marami pa pala talaga ako dapat malaman sa baking. parang gusto ko rin tuloy mag take ng class sa chocolate lovers. :)

sis lakwatsa ang gamit nya is anchor unsalted butter, she never use salted butter daw. but when it comes to butter, she understands daw na if kapag gusto mo gawing negosyo ito mas mura talaga yung butter na gagamitin. she did not suggest any other brand, nasa atin daw yun pero kung gusto mas mura meron naman daw yung golden crown na butter compound na pwedeng i-try. yung katabi ko na nag-take ng class, golden crown daw butter nya eh, ok naman daw. ako kasi queensland unsalted butter gamit ko. tinry ko din dati yung ambassador, di ko nagustuhan.

eto pa recipe:

SWISS MERINGUE

INGREDIENTS:
125grams egg whites
250grams sugar
1/2tsp vanilla powder

PROCEDURE:
1. Cook 3 ingredients to 120F or 49C(meron sya ginamit na thermometer panukat nung heat) over a double boiler with continuous stirring.
2. Once desired temp is reached, remove from heat and start whipping egg whites until stiff peaks.
3. Pipe on top of cakes, baked alaska, cupcakes and pies immediately. a kitchen torch may be used to brown tips of the piped swiss meringue.

BOILED ICING

INGREDIENTS:
3cups sugar
1cup water
1cup egg whites
1tsp cream of tartar
1/2tbs vanilla powder

PROCEDURE:
1. In a heavy saucepan, put sugar then pour water gradually on the sides of the pan. Avoid stirring mixture.
2. Boil syrup until it reaches 235F-240F, soft ball stage.(me technique sya sa amin na tinuro dito, kung wala ka daw thermometer, you can check with a clean and dry spoon and dip it on the syrup. then itaas mo yung spoon and check if yung syrup parang nagba-bounce back pataas at hindi na dire-diretso yung tuloy kasi medyo lumalagkit na sya, then malapit na sya mag-240F dapat wini-whip mo na yung egg whites and cream of tartar mo nun)
3. AS syrup reaches 230F, immediately whip egg whites together with cream of tartar. Once whites reach a soft peak stage, start pouring syrup into it in a thin steady stream, away from the attachment.
4. Whip until stiff peaks. Color as needed, preferably with gel-based food color.

^anchor din gamit ko e. baka nga yun pagwhip talaga ang secret para di agad magmelt.

parang scary yun swiss merengue at boiled icing kasi may kelangan ma-meet na temperature.  ;D

yap kaya hindi ko muna gagawin ito, mahirap na pumalpak. kelangan ko muna bumili ng candy thermometer to accurately check the temp.

any tips on how to make a really stable buttercream icing? kung pure butter kasi nagmemelt talaga specially during the summertime, i tried it kasi before pero medyo nagslide yung frosting & nawala yung shape after a few hours lang, actually after an hour medyo nagmemelt na.  :-\

thanks sis for sharing the recipes. Kelangan na bumili ng electric mixer before i can try these out. Yung egg white sis, in powdered form din ba yun? Kelangan talaga sa baking store bumili, no, kasi parang wala naman akong nakikita na powdered vanilla and egg white sa grocery

^yun vanilla powder, meron ang Ferna nyan. parang nakita mo meron sa grocery nun kaso madalang kasi minsan hindi naman kumpleto ang ferna products sa grocery.

yun merengue powder, meron nyan Wilton ang tatak nakita ko sa Gourdo's.

Thanks for sharing the recipes!

I will try to look for that vanilla powder and try out cupcake recipes soon... Ooops, wala pa pala ako cupcake trays! ;)

For butter, I use Queensland, the one in silver packaging, ok naman.  Recently B1T1 ang Emborg salted butter sa Shopwise, original price is P156/pc.

^alam ko na magprint na lang ko ng cars picture yun itusok ko kaso hindi ko alam kung ano tawag dun sa parang stick. tulad nung nasa picture.

Just print it out sa cardboard tapos glue mo sa colorful popsicle sticks o kaya kahit sa lollipop sticks or sa coffee stirrer.

Yung stirrer nabibili yan sa grocery sa section ng party needs like mga styro, plastic spoon, etc. Yung lollipop stick not sure if meron sa grocery pero try mo sa mga baking supplies / baking needs section ng grocery baka meron

coffee stirrer na lang siguro gamitin ko. next week na kasi, plan ko kasi nung una bili n alang ko ng cake kaso naisip ko para di na magslice sa school, cupcake na lang.  :)
