to those asking how i made the rainbow cuppies, kindly check this link to guide you:

Normally they use the ready cake mix, vanilla flavour. But I did my vanilla cupcake from the recipe of martha stewart, here it is if you want to try it:

Ingredients:

1 1/2 cups plus 2 tablespoons all-purpose flour
1 1/4 cups sugar
3/4 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1 large egg, plus 1 large egg yolk
1/2 cup plus 2 tablespoons warm water
1/2 cup plus 2 tablespoons buttermilk
1/4 cup plus 1 tablespoon vegetable oil
1 teaspoon pure vanilla extract
Directions

Preheat oven to 350 degrees. Line mini-muffin tins with paper liners.

Sift flour, sugar, baking soda, baking powder, and salt into a mixer bowl. Transfer bowl to mixer, and add egg, yolk, water, buttermilk, oil, and vanilla. Beat on low speed until mixture is well combined and smooth, about 3 minutes.

Divide batter among liners, filling each cup about 2/3 full. Bake, rotating tins halfway through, until golden brown and a tester inserted into centers comes out clean, about 17 minutes. Let cool in tins on wire racks for 30 minutes. Invert cupcakes onto racks, and let cool completely. (Cupcakes can be stored for up to 3 days.)

Notes:
1) As you notice, the cake mix looks yellowish because of the eggs, if me mabibili kayo na food colouring  (i used ameri-color brand) or from wilton brands na White muna, mas okay kasi this will make the cake mix colors more bright & vibrant.

2) Make sure when you divide the cake mix into 5 to 6 colours, dapat isang cup, isang spoon pang halo.

3) Maganda na food colouring at matipid if ganito bibilhin nio.

Hi sis! I love her tres leches cupcake! Yun ang share ko. :)

Copy ito from the school's recipe.

Sponge cake recipe
6 pcs egg separated
3/4 tsp cream of tartar
1 cup sugar, divided into 2
3 tbsp water, room temp
1 tsp vanilla
1/8 tsp salt
1 cup all purpose flour

Tres leches filling
1/3 cup condensed milk
1/3 cup all purpose cream
1/3 cup evaporated milk

Frosting
Whipped cream
Ground cinnamon

Topping
Mango balls
Sliced Strawberry
Sliced Kiwi

For the cupcake:
Pre-heat oven to 350 F. In a large mixing bowl at high speed, beat egg whites with cream of tartar until foamy. Add half of the sugar, 2 tbsp at a time, beating constantly until sugar is dissolved and whites are glossy and stand in soft peaks. Rub just a bit of meringue between thumb and forefinger to feel if sugar is dissolved. In small mixing bowl at high speed, beat egg yolks until light and lemon-colored, about 3 to 5 minutes. Gradually beat in remaining sugar, water , vanilla and salt. Sprinkle flour with a sieve over egg white mixture. Then, fold in beaten yolk mixture. Fill muffin pans 3/4 full. Bake for 10-15 mins. Or until done.

For the tres leches filling:
Combine the 3 ingredients until well incorporated

Assembling the cupcakes:
Cool your cupcakes for about ten minutes. Then, with fork or a small knife, pierce your cupcakes all the way to the bottom.pour about half a tablespoon of tres leches mixture. Pipe a rossette of whipped cream, sprinkle some cinnamon then top with stawberry, mango balls and kiwi. Actually, pwede naman ibang fruit basta low water content.

Super duper sarap nito. Very light at hindi nakaumay parang kaya ko kumain ng lima in one sitting. Haha. Perfect siya after a heavy meal.

May picture ako ng cupcake kaso di ko alam kung paano magattach dito.  :o

May mali ata sa gawa ko kasi bakit ganun, lasang puto, ano kaya ang mali ko?but ang cute ng kulay, kakatuwa!

I'm planning to make these for my daughter's small party with her playmates. Any suggestions for icing that can stand warm weather? They'll have their salu-salo in the playground. Also any tips to the retain the division of the colors? I'm getting quite OC that the layers are not separate. But my husband is saying ok Lang since kids will eat them.

Also, i find it a bit tedious layering the colors. What more if I make 3-4 dozens of these. Would it be helpful if I use a piping bag?

Hi sis, yung ginawa kung rainbow cupcake ang ganda ng naging color, roygbv ang color talaga hindi ko lang gusto yung naging lasa, nilagay ko sa sandwich bag bawat kulay para mailayer ko ng maayos.

^eto masarap naman yung lasa. Yung layering Lang talaga problem ko. Roygbv din sana siya pero yun nga the colors wont stay distinct. I think nasobrahan ko din ng butter. I used 1 cup instead of 3/4c kaya medyo naging runny. I'll try the sandwich bag trick next time.

You're welcome Sis! Sarap noh light and creamy parang kumakain ka ng cloud. hehe. You can make din Tiramisu with the same cupcake base. instead of the tres leches mixture, make a coffee syrup. Will post that recipe maya maya. :-*

Pour and whip yan sis. Medyo pricey nga kaya try ko yung frosty boy powdered whip, meron na ko dito pero di ko pa natry. Nilalagyan lang sya ng cold water tas pwede na iwhip. Hindi pa madali masira di tulad nung liquid form . Open star tip yan sis yung largest di ko alam tawag eh hehe.  ;)

Sis wala rin akong mixer! haha. Lahat yan by hand ko ginagawa. nakakapagod nga magwhip eh pero yun lang ang exercise ko. haha. Kaya mo yan sis! bake na!

^wow! talaga sis? thanks ha.. naghanap ako kahapon ng frosty boy powdered whip sa sm supermarket kaso wala akong nakita, medyo malayo kasi trinoma sa amin. itry ko nalang gumawa ng ibang frosting siguro. thanks ulit!

hi sissies.. I'm interested to learn how to make cupcakes. I hope someone here can share an easy recipe for beginners like me.  :D Should I enroll in a baking class> can anyone suggest what school and hopefully its just in quezon city. Thank you. :-*
