^ tanong ko din yan sis. although yung cupcakes and muffins na ginagawa ko they could last 2 days at room temp. baka longer than 2 days pwede pa, although di pa nangyayari yon kasi usually 1 day pa lang ubos na :D

2-3days siguro at room temp. pero dapat naka store yan sa box or sa airtight container.

^hindi talaga tatagal ng 1day ang mga goodies natin, lalo na kung masarap. except nalang kung marami kang ginawa. ako yung hindi naubos for a day, pag may frosting, kailangan sa ref, nakatupperware or box. pag walang frosting, nilalagay ko sa tupperware, nireref ko din kasi gusto nila chilled. minsan sa dining table lang, pero naka tupperware pa din.

yung mil ko kapag holidays, nagbebake ng maraming cake, tapos nilalagay sa freezer. kapag may nag order, thaw lang yun before frosting. mas masarap pa kesa sa bagong gawa. walang palya yun. nung hindi pa ako marunong magbake nun, e mag aabroad kasi siya, nagbake siya month of MAY, 2cakes. 1 cake ni-frosting ko ng june for sils birthday. tapos yung isa naman ni-frosting ko ng july for my birthday.

ang fruitcake namin, stored sa ref for a year, then dun palang kakainin, masarap. kasi nagferment na talaga yung brandy sa cake. by the way, hindi lasang alak ang fruitcake niya. hindi nakakahilo. ako, personally, ayoko talaga ng fruitcake dahil first time na kumain ako niyan, niluwa ko. hehe. pagtapos nun takot na ako, until maamoy ko at matikman ko yung kay mil. nagbago isip ko.

^^ ang galing sis, pwedeng 2 months sa freezer ang cake? pero dapat siguro nakabalot ng mabuti or separate freezer for cakes kasi baka mag-amoy karne yung cake.

Same with bread din pala pwede store up to 2mos sa freezer. Any cake kaya pwede sa freezer? Cheesecake kaya? Hehe. Kelangan talaga sealed or wrapped in plastic kundi it will get freezer burns and baka maglasang meat.

^pixiedust, hindi siya soggy sis kahit na freeze ng matagal then thaw. hindi mo nga aakalain na matagal na palang nabake yun e. :-)

^beachgirl, sealed dapat ang cake pag sa freezer. talagang nakadoble doble ng wrap para safe. gusto nga namin bumili ng separate freezer para sa cakes, kaya lang hindi naman kami everyday may order, seasonal lang kami, like christmas. yung ibang kakilala namin pag may birthday, samin nagpapagawa ng cakes. pag ka paisa isa o dalawa lang naman, kaya pa 1 day notice. o kaya sa umaga gagawin, pickup sa hapon or gabi. :-)

^lexi_girl, choco cake palang ang nai-store namin sa freezer. yan kasi ang signature namin. :-)

regarding the oiliness sa cardboard, i share the same sentiment. dahil nga siguro sa weather mga mga sis. kasi minsan naman okay yung carrot, hindi gaano ka oily compared to some instances. siguro because of the humidity, mas lumalabas yung oil nya.

^^sis, try using those aluminum muffin liners. Makapal siya but mahal! It doesnt absorb oil at all or.. Sometimes what i do nalang when using regular liners i double it nalang.

When baking carrot cake, it helps din to emulsify the oil. Beat first the sugar and eggs tapos pour the oil in a steady stream while mixer is on high.. Beat for one minute until emulsified and light in color (like making mayonnaise) this makes the cake light and moist but not greasy at all. The oil doesnt settle at the bottom kase.

I just made carrot cupcakes last night and sad to say, not so appealing-looking sya kc porous ang itsura :-s

Baka kasi sa ginawa ko na to beat the oil and sugar lang when baka dapat yung sabi mo ang tama :|

I'll try again, this time sa method na sabi mo ang gagawin ko ^^ thanks for posting the info :)

anyone who can share their cheese cupcake?

may nakikita ako online, but they only put cheese on top of a cupcake, pero hindi nakahalo ang cheese sa cupcake

favorite kasi ni hubby eh, kaso my friend doesnt want to share where they bought the cheese cupcakes.

:( yup sis, ang nagawa ko is oil + sugar. eto kc ang sabi ng recipe:

^^haven't tried cheese cupcakes yet. what if try mo sis na parang white cake tapos haluan mo ng cheese bits.
another one na naiisip ko though di ko sure kung magwowork is yung milk, replace mo ng melted cheese. or cheese sauce (cheese melted in milk). damihan mo lang siguro yung milk para di masyadong thick.

if nalagayan na ng buttercream frosting sa ibabaw saan siya pwede istore?? freezer or ref or chiller?
hindi ba nagmomoist?

if you are making big batches of cupcakes like 50's or more, saan niyo iniistore?? or on the day niyo lang ginagawa?

if youre going to store it nilalagyan nyo na kaagad ng frosting?

sorry dami questions im starting pa lang kasi.

^on the day itself. if i have to make it the night before, nilalagay ko sa room with aircon on. then i frost on the day. like pag magdadala ako sa party, i frost just before i leave.
pag may tira na frosted na, i just store sa fridge. hindi naman nagmmoist.

kami pag big batches ng cupcakes, a day ahead ginagawa, usually morning, para sa gabi frosting nalang. nakaref muna yan. nakastore sa rectangular baking pans tapos may takip na aluminum foil. pag na frost na, balik ulit sa baking pans at i-reref ulit para machill kahit wala ng takip na aluminum foil. ready na siya the next day.

^kapag wala pang frosting, madali lang store sa ref yan. easiest na yung sa baking pan na rectangle mga 3" pataas ang height kung wala kang maraming tupperware, marami ng standard cupcakes ang kasya dyan. tapos takpan mo ng foil. tapos yung next pan, pacrosswise mo naman ipatong sa isang pan kung konti lang divider ng ref mo. dalawa kasi ang ref namin, yung isa pang cakes, kaya maraming divider na pwedeng ilipat lipat ng layer.

kapag naman may icing na, pwede pa rin sa baking pan, kahit wala ng takip na foil. yung icing na kasi ang parang cover ng cupcake mo kaya hindi siya magda-dry. problem lang dyan, kung konti lang divider ng ref mo, kung mataas ang cupcake mo dahil sa icing, hindi mo pwede pag patong patungin yung pans mo. kailangan separate layer. or, ilagay mo na sa boxes, that way, pwede mo pagpatung patungin.

in making ganache, anong "cream" brand ang gamit nyo? sabi kc sa recipe thick cream but di ako maka decide ano ba talagang cream :(
