i tried a butter cupcakes recipe during the weekend. nung nasa oven sya ang ganda pero pagkalabas ko bumagsak after a while. any idea what went wrong? i opened the oven door after around 10 minutes -- could this be the reason? ang sarap pa naman sana pero na-discourage akong gumawa ulit. :(

parang too soon yung 10 mins nga. kasi parang umaalsa pa lang siya at that point tapos tinanggal mo na so bumagsak.
double check mo din yung proportions ng recipe mo. sometimes it could be the recipe itself din. or yung pagmeasure mo nung ingredients.

but at the end of the day, kung masarap naman (at for personal consumption lang) you don't have to be discouraged. :D


Sis j27, question naman - sometimes when I bake cupcakes, may ilan na medyo mas dark to almost burnt ang bottom tapos the rest okay naman.  Flat naman ang pan ko sa oven rack.  Is it because gas ang gamit ko na oven?  I'm thinking I should "rotate" the pans after 10 minutes or so. 

you can rotate pag ganun. doesn't matter kung gas or electric. it's the heat distribution that's the culprit. yung electric oven namin and yung luma naming oven (gas) ganun. yung nasa likod na part mas madaling maluto. i guess, hindi even yung pag init sa loob. so i had to rotate. pero yung oven namin na mas bago (gas) i don't have to rotate.

j27, yes, more than once  :( mukhang uneven nga ang heat distribution ng oven ko.  Kailangan ko talaga maging more careful pag nagbabake.  Try ko magrotate ng pans next time.  Akala ko pa naman ang reason is gas ang oven ko at kailangan ko ng electric (excuse ko lang siguro to buy a new one  ;D)

^hehe. we use gas oven din, both here and sa pinas. pantay naman ang luto. pero sabi ko nga, may mga oven na may sakit na ganyan. para comfortable ka, palitan mo na kung may budget ka. hehe.

re: rotating pans. ang cupcakes usually takes 23-25min in a 350deg diba. siguro, wait for 15min then rotate mo na. dapat mabilis ha, para hindi lumabas masyado yung init. kung hindi, babagsak ang temp mo.

^sis bat ang tagal ng baking time mo? Usually 15-20mins lang ang regular sized cupcakes di ba?

^depende sa recipe ko. my carrot cupcakes are baked for 25min, blueberry cupcakes 25min, chocolate cupcakes 23min, lemon cupcakes 20min.
usually, yung mga naka box, ready made cupcake mix, yan ang mga tig less than 20min baking time na nakikita ko.

Talaga? Kasi ako I bake my cupcakes from scratch and most recipes indicate 15-20mins. Napanood ko pa nga sa dc cupcakes that they bake them at around 14mins.

Baka depende din siguro sa consistency ng batter?

sakin mga 15-25 depende sa recipe.

depends din minsan sa oven. some ovens heat up more than others kahit sabi sa dial 350F yung actual temp is not exactly ganun.

^forever20atheart, depende talaga sa recipe. i bake from scratch, too. the time and temp indicated is tama lang for each of my recipe. you would know naman kung kailangan mo maglessen ng time.
yung sinasabi mo baka they bake at higher temp kaya mabilis lang. my cupcakes are always at 350temp (180 sa dial).

^Nope, all my cupcake recipes are baked at 350F din. I guess depende talaga sa consistency ng batter and what else is included in the recipe.

Pero I usually bake mine for around 10minutes lang kasi mas mainit yung oven namin dahil siguro sobrang tagal na din. I actually bake it around 300F lang :))

pag milk lang ang nakalagay sa recipe, what kind of milk would you recommend? evap ba, or yung mga ready to drink in tetra, skim ba or full-cream, fortified, etc? daming klaseng milk ko nakikita sa grocery

^so far, ang milk na ginagamit ko palagi when the recipe calls for milk, evap lang, o kaya yung fresh milk/low fat milk.

i usually use low fat na fresh milk kasi yun ang meron kami lagi. but in case wala kaming gatas sa ref, i would still use that or yung fresh milk in tetra. i find kasi that evap is slightly sweeter.

ako din i use fresh milk. if i don't have that in stock i use evap pero i dilute it with water.

^yung nestle but pag wala, just use milk and vinegar,  every cup of milk add a tbsp of vinegar and let it sit for 5 minutes.

^^plain yogurt. if the recipe calls for 1 cup sour cream, i use 1 cup plain yogurt

also, for buttercream buttermilk, pwede din plain yogurt ang gamitin as substitute. typo-error lang po. nalito lang.

^yup! yogurt din gamit ko/ actually yung 3 na yun interchangable. mas madali lang bumili ng yogurt.
