^ yun na nga din naisip ko, baka bumigat yung cocoa dahil sa moisture. ilalabas ko nalang sa fridge. :)

i tried baking butter cupcakes last week and they turned out masarap naman. i put cheese sa ibang cupcakes, yung iba choco chips naman. then this weekend i tried choco cupcake and they turned out good din.

i followed these recipes from homecookingrocks:

Butter cupcakes:

Ingredients
•   1 and 1/2 c. of cake flour
•   3/4 tsp. of baking powder
•   1/4 tsp. of salt
•   3/4 c. of butter, at room temperature
•   1 and 1/4 c. of white sugar
•   3 large whole eggs
•   1/3 c. of buttermilk
Instructions
1.   Preheat the oven to 350F.
2.   Sift the flour, baking powder and salt into a bowl.
3.   In a large mixing bowl, beat the butter and sugar until light and fluffy. I used a hand mixer but a wire whisk will do. DO NOT overmix: you will know you have overmixed if the butter solids separate from the fat.
4.   Add the eggs, one at a time, beating after each addition and making sure that the egg is fully incorporated in the mixture before adding the next one.
5.   Add the flour and milk in batches. Add a third of the flour first, mix; add half of the milk, mix; add the next third of the flour, mix; then the remaining milk and, finally, the rest of the flour.
6.   If you’re making cupcakes, scoop into the holes of the cupcake/muffin pan (see tips).
7.   If you’re making a cake, pour the batter into a round 10-inch cake pan.
8.   Bake at 350F, 17 to 20 minutes for the cupcakes, 40 to 50 minutes for the cake.
9.   Cool the cake or cupcakes in the pan for five minutes then transfer to a rack to cool completely.


Chocolate cupcakes:

Ingredients
•   1-1/8 c. of cake flour
1/8 c. plus 1 tbsp. of cocoa powder (I used Hershey’s)
1/2 tsp. of salt
3/4 c. of sugar
3/4 c. of vegetable oil
1 large egg
1/2 tsp. of vanilla extract
1/2 c. evaporated milk
3/4 tsp. of baking soda
1 tsp. of white vinegar
Instructions
1.   Preheat the oven to 350F.
Line eight holes of a 12-hole muffin pan with paper cups. If you plan on giving away these chocolate cupcakes as a Christmas gift, I suggest you use those metallic paper liners in Christmas colors.
Sift together the flour, cocoa powder and salt.
Whisk the oil and sugar until smooth (I used a wire whisk). Add the egg, whisk until incorporated. Add the a third of the flour and mix. Add half of the milk and mix. Add another third of the flour, then the remaining half of the milk and, finally, the last third of the flour, mixing after each addition.
Place the baking soda in a small bowl. Pour in the vinegar (watch the mixture fizzle!). Pour the mixture into the cake batter and mix until incorporated.
Pour the batter into the lined muffin pan. It is alright to almost fill the holes to the brim as the cupcake batter will only rise at the center.
Bake for 20 minutes.
Take the cupcakes out of oven, transfer to a wire rack to cool completely before frosting.

i tried a butter cupcakes recipe during the weekend. nung nasa oven sya ang ganda pero pagkalabas ko bumagsak after a while. any idea what went wrong? i opened the oven door after around 10 minutes -- could this be the reason? ang sarap pa naman sana pero na-discourage akong gumawa ulit. :(

Sis beachgirl, baka hindi pa luto ang loob ng cupcakes mo.  Try mo icheck ng toothpick next time.  Insert mo lang toothpick sa center, pag malinis sya, ok na [textspeak!] cake mo.  May mga oven kasi na kahit sunod ka sa baking time ng recipe, hindi pa luto ang cake mo.

^ sis palagi akong gumagamit ng cake tester to see kung gawa na yung loob ng cupcake, and gawa na sya nung nilabas ko. pero tama ka, kahit 25 mins at 350 degrees ang nakalagay sa recipe, usually mas matagal pa bago pumasa sa toothpick test.

question nga pala... do you know where i can buy standard muffin pans na mura? namamahalan ako sa mga nakita ko sa department stores and baking supplies shops, puro mga P700+ for a pan with 12 cups

Sis, why did you open it? To check if luto na?
Sis, kaya bumagsak yung cupcakes mo kasi hindi pa siya well baked.
Don't open the oven door to check it. Kasi yung heat na nasa loob nababawasan,
bumababa yung temp sa loob niya so and tendency mahihilaw siya.

Yup, do the toothpick test.
10 mins. it too early to check it. Don't forget din to preheat the oven.

^ i opened the oven door kasi i put in the loaf cake i wanted to bake with the cupcakes. it was too late when i realized i wasn't supposed to "disturb" the cupcakes the first 15 or so minutes. naisip ko din na baka that's the reason kaya bumagsak.

na-try ko tumingin sa landmark pero yung pans na nakita mabababaw. i'll check again next time i'm there. thanks sis! :)

aside from the toothpick test, you would know kung luto na ang cake/cupcake kapag pinress mo siya sa ibabaw and mag spring back siya sa original shape.

also, overlapping baking pans would result to a "hilaw" or maybe "sunog" naman yung isa. kung magkatabi sa oven (same height), okay lang yan pagsabayin. yan ang advantage ng malaking oven, you can bake different goodies at the same time, specially kung pareho sila ng temperature at baking time.

Sis j27, question naman - sometimes when I bake cupcakes, may ilan na medyo mas dark to almost burnt ang bottom tapos the rest okay naman.  Flat naman ang pan ko sa oven rack.  Is it because gas ang gamit ko na oven?  I'm thinking I should "rotate" the pans after 10 minutes or so.

I always bake cupcakes for my son and sometimes for my husband co-workers. Red Velvet cupcake with Cream cheese frosting our all time favorite :) i just use betty crocker cake mix yung nabibili sa mga grocery stores. pero yung icing ako mismo ang gumagawa. I use cream cheese, butter, powdered sugar, tapos mix lang lahat. kung gusto naman ng ibang icing flavors like vanilla just add vanila extract or yung parang syrup, magiging vanilla na yung taste niya, kung chocolate flavor naman just add chocolates. HTH :)

ako size 2 yung ginagawa ko. ang pan na ginagamit ko yung aluminum lang. yung single lang hindi yung usual pan na magkakadikit siya na usually 10 or 12 pieces na cupcke holes per pan. parang wala pang P10 ata ang isa. kasi around p60 or less lang ata bili ko sa landmark for pack of 6 pieces. Mas mura pag sa palengke ka bumili kasi yung lanera for leche flan 9 pesos lang sa palengke namin eh mas maliit pa yung para sa cupcake.

hindi rin kasi ideal sa akin ang muffin pan na square or rectangular kasi turbo lang gamit ko, bilog yun. so ginagawa ko yung mga single cupcake pans ko pinapatong ko lang sa isang malaking round pan.

pero later on pag nagkabudget siguro i'll buy an oven na and invest na din sa mga non stick pans pero for now na nagaaral aral pa lang ako okay na muna yun para mas mura, okay naman so far mga niluluto ko eh

^dmarius, sometimes? ibig sabihin hindi lang once nangyari sayo yan noh. baka hindi na pantay ang luto ng oven mo. may ganyan kasi e. or, baka naprolong naman ang baking time mo. or, baka masyado mainit ang oven temp. yun lang ang naiisip ko na reasons. im not a fan of rotating pans in the middle of baking, although yung ibang recipe, inaadvice yung ganyan.

^msals, ah kaya pala singles ang muffin cups mo noh. ano yan yung parang sa pang enseymada ang itsura? edi maraming salang ang ginagawa mo kapag marami ang ibe-bake. yung muffin pan ko na standard 12s, set nung nabili ko e, marami siya kasama for DH59 (around P650), may 9" round pan, baking sheet, 9"loaf pan, tsaka yung 12s muffin pan. naka sale kasi. hehe. inaabangan ko nga mag sale ulit e. bibili pa ako.

sis baka hindi even ang distribution ng heat sa oven mo. not sure if it has something to do with whether you're using a gas oven. electric yung sa amin at ganon din, pero medyo kabisado ko na kung aling rack yung mas mabilis uminit.

usually mga 8 cups per batch ako. konti lang naman ako mag bake hanggang 2 batches lang.
