mga sis, gusto kong mag ambisyon na gumawa ng cupcakes for my son's bday. hehe... i have background in baking naman but HS pako nun. hahaha. ask ko lang where online can i find delicious but easy cupcake recipes? iniisip ko kasi instead of the swirly toppings, [textspeak!] parang topping ng carrot cake parang cream cheese frosting....

yehey i found the cupcake thread!

sa mga sis na palaging gumagawa ng cupcakes, is it okay to double the recipe? kasi naman usually 24 cupcakes lang ang nagagawa ng 1 recipe, eh sa dami ng tao sa bahay namin kulang talaga yon. one of my friends said it's not recommended daw. how true?

during the weekend i made peanut butter choco cupcakes at nagustuhan naman ng mga tao sa bahay :)

^i bake as a hobby so i don't know kung may talagang "rule" for that. but for me i don't see anything wrong with that. mas ok nga sakin ganun eh para one go ka nalang. and siguro the result is more consistent. unlike pag gagawa ka ng 2 batches or more.

as long as kaya mo gawin yung 1 big batch ng isahan siguro. yung mixer ko, the biggest it can probably accommodate (comfortably) is for a 24 cupcake recipe. so if i were to make more, edi gagawa nalang ako ng another batch. kasi mahirap na yung for me. but kung kaya naman ng tools mo, why not.

^^Kaya siguro di advisable kase sa baking soda and baking powder dahil once you mix it with the liquid ingredients nagaactivate kagad siya and pag natagalan at di mo kagad na bake baka may tendency na bumagsak or di umalsa yung cupcakes. Ewan ko theory lang.  :)

^^ oo nga naman ano, bakit ko dodoblehin yung recipe kung di naman pala kaya ng mixer. thanks sis! when i bake cookies kasi usually i don't have a problem with doubling the recipe, pero nag-aalangan ako sa cakes and cupcakes.

^ ah... wala ako masyadong alam sa kung para saan yung bawat ingredient eh, pero parang ganyan din yung sabi sakin ng brother-in-law ko.

^^keri lang yan sis. ako hindi talaga ako masunurin sa recipes. sa cakes/cupcakes, mas masunurin ako ng konti pero minsan matigas pa rin ulo ko. haha. pero ok lang kasi for personal consumption lang naman. and dun ka din matututo eh. in fairness, kinakain din naman ng mga tao dito. either ok naman yung result or my family just loves me lang talaga. haha!

baka may alam kayong tried and tested recipe for strawberry cupcakes? nagpapagawa yung pamangkin ko for her birthday. at anong icing yung favorite ninyong gamitin? the first time i made buttercream nasobrahan sa tamis, parang kumakain ka ng asukal.

^buttercream din madalas ko gawin. sometimes i use cream cheese frosting also. sa frosting sis, unti-untiin mo yung add ng sugar para pag feeling mo matamis na, stop ka na. tapos you can add other flavors depending on your cupcake.

^ yun ang mali ko the first time i made it. sobrang by the book kasi ako kung sumunod sa recipe directions kaya nung sinabi 4 1/2 cups confectioner's sugar, go! ayun, nasobrahan sa tamis. i'm searching the net now for strawberry cream cheese frosting.

^try mo sis, make basic buttercream or cream cheese recipe tapos mag blender ka ng fresh strawberries. then yun yung ihalo mo. unti-unti mo lang yung add ng sugar and strawberries until mabalance yung sweetness and texture.

^ oo nga sis naisip ko din yun :) pero now i'm thinking na mukhang walang available na fresh strawberries ngayon - or kung meron man maasim yun malamang. kaya sabi ko sa pamangkin ko i'll make choco cupcakes nalang for her birthday.

I'm not very fond of eating cupcakes but I love decorating them  ;D

I'm making cupcakes for my niece/inaanak's birthday and I'm not yet sure what kind of icing ill use. buttercream lang ba [textspeak!] ang madaling gawin? how about dipped fondant? anybody here tried that? gusto ko kasi simple lang...  :)

buttercream is kind of basic na frosting for cupcakes. but i love the cream cheese frosting, esp pag banana and carrot cakes/cupcakes. but i always make sure na hindi masyadong matamis, so i limit my sugar. dapat nalalasahan ko yung cream cheese, hindi yung asukal.hehe

^^buttercream is popular kasi masaya mag pipe to decorate. eto madalas ko gawin tapos i just flavor and color it depending on the cupcake.
you mean poured fondant sis? madali lang din siya gawin. just microwave some fondant until it's "dippable". tapos dip the cupcake top. it can be messy sometimes but the outcome is a nice too. though medyo kulang tingnan yung cupcake kung yun lang. so you can add more decors on top. my tita made some a while back. what she did is, pagka dip nung cupcake, dinip niya sa bowl of rainbow sprinkles. so it's all covered in sprinkles. cute.

sis, why don't you try strawberry flavoring or extract? :)

another tip pala, when using chocolate, add a bit of coffee, mas nabbring out yung flavor ng chocolate :)

^thats what i do also.. 1 teaspoon instant coffee for every recipe.

talaga, coffee? hmm, i'll try it next time. question about cocoa... is it okay to refrigerate the cocoa? we use bensdorp and my mother says ilagay daw sa fridge. do you do this din?

^ako i don't. (even the regular chocolates na kinakain) kasi i noticed if you put it in the fridge, once you take it out, mas madali na siya matunaw. but i don't know if it has any effect sa taste or quality. it might bring in more moisture i guess. i don't know.
