Searched for "cupcake / cupcake recipes" but found nothing so I startred a new thread.

Please share your yummy cupcake recipes and tips. I wanna try making one soon  ;)

i like cupcakes too kaya lang [wala] ako oven eh kaya hndi ako mkapag experiment nito. but i watch on tv sa lifestyle network, there's one episode, she use oil instead of butter kaya super moist ng cupcake nya ;)

ako i buy cupcakes lang sa malls, kasi medyo nahihirapan ako mag measure ng ingredients e.. lagi ako pumapalpak.. hehe what i do, i always put ice cream on top of the cupcake, my fave ice cream kasi is heaven.

so masarap, kasi i dont have to buy for any other toppings kasi satisfied na din ako with my ice cream cupcake! :D

^sabi nga nila konting mali lang sa ingredient malaki ang difference sa result.

hindi pa din ako nakakagawa ng decent frosting. laging bagsak yun buttercream ko  :-[

Try this frosting. been using this recipe and ok naman siya

Ingredients

• 1/4 cup powdered cocoa
• 1/2 cup butter
• 3 and 3/4 cup powdered sugar
• 1 cup chopped pecans (may be replaced depending on your preference)
• 1 teaspoon vanilla

Directions

In a medium saucepan, mix together cocoa and butter.  Heat over medium heat until melted then bring to a boil.  Remove from heat and add powdered sugar, pecans and vanilla.  Stir until blended well.

I just buy double chocolate cupcake of lemon squares and then I decorate it with icing and sprinkles. Pero sometimes I buy the mini cupcake ng frostings.  :D

mga sis pwede pa share naman recipe for vanilla at chocolate cupcake pati na den buttercream frosting... gusto ko kase sana mag bake nito pero wala pa ko nakita na ok gusto ko kase sis yung tried and tested na.... yung isang recipe pala dito ano chocolate buttercream frosting ba ito?... pls pls pa share naman.. kase gusto ko talaga matuto nito eh... tnx mga sis..

Sis, I usually refer to marthastewart.com for recipes.  I tried her vanilla cupcake recipe and ok naman sya.  Her butter cream recipe is here -> http://www.marthastewart.com/recipe/simple-buttercream

So far, that's the easiest buttercream recipe I've tried.  I tried recipes with egg whites pero never ako naging successful.  Plus, there's risk of salmonella if you don't cook the egg whites properly (it has to be at a certain temperature before you whisk it).  Buttercream is usually on the heavy side so overpowering your flavor.  I want to try a light whipped frosting next time  :)

A few tips:

1. When creaming butter and sugar, always make sure to cream it for AT LEAST 5 minutes.
2. All ingredients should be at room temperature because it helps incorporate the ingredients better.
3. Unless specified in the recipe, add wet and dry ingredients by thirds. 1/3 dry, mix slowly, 1/3 wet, mix slowly, 1/3 dry, mix slowly, 1/3 wet, mix slowly, 1/3 dry, mix slowly, 1/3 wet, mix slowly. Then use a spatula for the sides and to ensure that batter is well mixed.


For frosting, I don't really use a "recipe" ever since I read something sa site and from personal experience.
I followed the recipe to a T but the icing just kept falling apart.

So for buttercream icing, I just mix butter, icing sugar, milk, and a little vanilla extract. If it's too runny add more icing sugar, if it's too stiff, add more milk. If it's extremely hot, shortening would help too. Tapos to test just use a spoon and plop it on a plate or counter, if it holds it shape and tastes good then its good for me :D

^ako naman i'm addicted to both! haha. i love baking (and cooking in general).

^^^same here. i usually "eyeball" the frosting. in my experience kasi most of them turn out to be too sweet or yeah, bagsak.

i use the same basic recipe for buttercream as yours too. tapos i just add something else (chocolate, fruit, flavorings, etc) para maiba depending on the cupcake.

for me, i test the consistency of the frosting by swirling a spatula in the bowl. pagtanggal, dapat magfform ng swirly peaks. tapos it should stay there. if it's too soft, it sort of melts into the rest of the mix.

when frosting, make sure you let your cupcakes cool on a rack first. i have a friend who was a little too excited to frost her first cupcakes, she did it right after she took the cuppies out from the oven.

Saka pala don't be afraid to experiment :) Kuwari may basic white cake recipe kayo, dagdag kayo ng flavors na tingin niyo masarap tapos experiment with baking times din, for example yung isa 14mins tapos yung isa 15mins, believe me, 1 min will make a difference, napnood ko yun sa dc cupcakes :)
