Here's my recipe:

For the cream:
  • Garlic
    Onion
    Peper
    Butter
    Fresh Milk
    grated cheese (quick melt is preferred but other cheddar cheese can also be used)
    nestle cream
    *optional: campbell's cream of mushroom
    *optional: egg
    Parsley fresh, chopped
    basil (dried or fresh, chopped for add on flavor)
    knorr cube (beef, chicken, shrimp depending on your meat) - this is optional to those who are health conscious)


For the meat, you may try the following combination:
  • chicken fillet and mushroom
    ham, bacon and mushroom (make sure to fry bacon and ham until slightly toasted)
    tahong, halaan, squid and shrimp (i preferred na cooked and nabalatan na para mas madali kainin :))
    meatballs and mushroom (cook the meat balls first)

any kind of pasta will do :) cook and drain

saute the onion then the garlic in butter. make sure not to burn kasi it will leave bitter taste. add the cream of mushroom, nestle cream and fresh milk. stir constantly and add a little water if necessary and put to boil. add the cheese. stir constantly until the desired consistency. add pepper. then add desired meat. add beaten egg if desired. then add basil and parsley.

kung seafood ang mix mo, gamitin mo yung pinaglagaan ng seafood para mas malasa. same goes with chicken.

mix the pasta and the sauce. serve hot. sarap!  ;D

my mom also puts a lot of nestle cream to her carbonara. then maraming parmesan. yuh-mmmeee!
masarap talaga kapag maraming cream sis. saka kung may budget, Parmesan cheese talaga is the best topping :) lalo pag may bacon bits. yum yum :)

halos pareho pala tayo sis ng recipe. but with mine, i add mushroom, capsicum and parsley and i use only yolks (i know too fatty. lol)

carbonara is one of my 'fast food' recipe kasi it's something that i can whip up in 10 min. so kahit uber pagod sa work, kerri pa din mag-cook ;D

here's my recipe:

2 large eggyolks
3/4 c grated parmesan cheese
1 tbsp chopped parsley
1 c diced smoked bacon
1 c sliced mushroom
1 diced small capsicum
1 tbsp cracked peppercorns
salt to taste (but i usually use 1 tsp)

200g uncooked pasta

1. while pasta is cooking, fry bacon until fat is rendered. set aside about 2 tbsp of crispy bacon bits so you can add this as toppings later on.
2. add capsicum and mushroom. season with salt and pepper.
3. in a separate bowl, whisk egg yolks and parmesan cheese together.
4. when pasta is cooked, drain but reserve about 1/2 cup of pasta water.
5. mix pasta to your bacon/mushroom/capsicum mixture.
6. pour in eggyolk mixture to the pan. toss gently but quickly because you need the heat from your pasta to cook the yolk mixture.
7. add pasta water if you want your pasta to be creamier but add cautiously. start with a tbsp then build it until you reach that creamy consistency that suits you. (you dont have to put all the reserved pasta water ha.
8. add in parsley. (i toss in parsley as a last step because it adds in that hint of freshness in carbonara eh)
9. put on serving platter, top with crispy bacon bits then serve immediately :)

I want to share my recipe for fettuccine carbonara. Niluto ko to nung christmas at nagustuhan talaga nila, lalo na ng tita ko na meticoloso sa pagluluto. Yung sauce nito sakto sya sa isang pack ng fettuccine.

1 pack fettuccine pasta
1 can cream of mushroom (campbell's)
1 can evap milk (big)
1 can sliced mushroom (big)
3-4 tablespoon plain yogurt
1 1/2 cup sliced hamon de bola (purefoods fiesta ham)
1 pack sliced bacon (smallest packaging)
1 head garlic minced
1 medium onion minced
chopped parsley
salt
pepper

Fry bacon for garnish then set aside. Sauttee garlic and onion, add sliced ham, add chopped parsley sautee for 4mins. Add the drained sliced mushroom and cook for 2-3mins. Add cream of mushroom and yogurt then simmer. I add 2-3 tablespoon of water to the cream of mushroom can para masimot at mejo creamy rin. Add milk. Season with salt and white pepper.

anybody here who knows how to keep the pasta moist? I made the authentic carbonara but later on went dry. The next day, when I tried reheating it by steaming (with the top covered), it became a bit bland.  :-\ so I had to season it with parmesan again.

it will definitely  get dry since pasta would absorb all the liquid/moist. it still best if you separate them and apply the sauce once your going to eat it.

just had carbonara at the sandwich guy stand. :D

^thanks for the feedback. i'd still rather mix them before serving. maybe I should just estimate the number of servings and not combine everything. :D

hinde ako fan ng carbonara pero madalas ako magluto kasi masarap daw (?) sabi nila LOL

my simple recipe:
white onion
bacon
campbelle's cream of mushroom
nestle all purpose cream
McCormick mix.
cheese

hey sistahs! i learned this carbonara recipe from my supervisor. ginawa ko for christmas, grabe, ang yummy! eto sha:

bacon (kng 6 to 8 strips)
** fry in a non-stick pan with no oil coz you need for it to render it's own oil. kung kinda konti ang oil nya, tulungan mo na ng konting veggie oil.
** once brown and crunchy, remove from pan and turn to bacon bits to sprinkle over carbonara.

sa oil ng bacon, mix all these altogether.

1 stick of butter, 3 cans evap, 1 can cream of mushroom, 1 small block of grated cheese, cubed ham and frozen peas and carrots. mix till sauce is thick then add a dash of pepper (or more if you want) and voila! carbonara sauce. take your pic of pasta, cook accdg to package directions and pour carbonara sauce over. sprinkle with bacon bits. no need to add salt. grabe, ang sarap, and sinful at that so it's not for dieters... killer carbonara sha ever... :)

I don't use mushroom sauce in my carbonara sauce. Hehe. Instead, I use white wine after sauteeing the garlic, ham, bacon, onions. Tapos kapag nareduce na, I add the all purpose cream. Tapos naglalagay ako ng fresh oregano leaves then tatanggalin ko after cooking the sauce itself. Once na-mix mo na yung pasta and sauce, habang mainit pa, add 1 egg yolk then mix agad para 'di siya maging scramble egg. :) I got this recipe from Enderun, nung nagbigay sila ng lesson sa school ko :)

Ako I use just the McCormick powder mix, then add ng Nestle cream, mushrooms, bacon or ham. Easy lalo na pag may biglaang bisita. Dagdag din ng parmesan cheese. Love ito ng family ko! :)

ako rin I use McCormick mix, milk or cream isn't needed, optional siya. when I was counting calories gusto ko to. If you want it creamy you can add milk or cream, I tried it with both masarap. nagguilty lang talaga ako sa calories kaya di ko na nilalagyan and yung mismong oil ng bacon pwede na.  ;D

I tried this recipe in allrecipes.com for alfredo sauce that u might wanna check out. It's a good alternative for carbonara and very easy to do...

You only need heavy cream (tetra available in chilled section of supermarkets), romano cheese, butter, parmesan and garlic powder...

My son absolutely loved it... if u want a change in texture, put some sundried tomatoes...

All these are available in supermarkets
