we always cook carbonara even without occasions,basta nag crave kami,ayun were going to cook it right away,since madali naman hagilapin mga ingredients,one of our favorite food sa bahay :)

share the ingredients:

Garlic
Onions
Butter
Mushroom
Sometimes we use Bacon or Shrimp,Squid,Chicken
Evaporated Milk
Cream Cheese or Nestle All purpose Cream
Kraft Eden Cheese (we put this if we use all purpose cream but if we use cream cheese hindi na kami naglalagay ng cheese,kasi nakakaumay agad)

yan yung simple at madaling way namin on how to cook carbonara,but pag may occasions/parties,we have different way of cooking it, :)

sis eto naman style ko actually hindi ko alam if anyone really does this but last christmas someone gave us 4 boxes of campbells and 4 boxes of Century tune chunks January na hindi pa nababawasan so one weekend I tried...

I tried mixing them....

4 cans of cream of mushroom (smallest can yung payat)
4 cans of tuna chunks
1 small can of evap
2 tetra box of nestle cream
1 eden cheese

-gisa onions and bawang which are finely chopped, then next the chunks then cream of mushroom then yung milk and cream. I grated cheese na rin pampalapot. then ground pepper
-cook pasta (nagamit ko na lahat, macaroni, spaghetti, twisted na pasta, yung pangsopas hahaha)
-then cheese and nori yung pang top ko, nakakaumay kasi pag walang nori hehe.

yun lang. eversince eto na lagi ko ginagawa... mas healthy pa siguro if I will cut down on the cream and evap hehe.

for carbonara  I always look for Elle and Vire cream. pag wala at naubos na sa grocery, yun brand na President nman ang alternative

cream of mushroom din ang secret ko, evap milk, all purpose cream, ham or tuna and weird but knorr pork cubes. sakto! yum yum
tas pag ready to eat na, add ng basil :)

ako naman i use almost the same traditional ingredients like nestle cream, milk, egg, cheese, mushroom and bacon or ham but i use full cream fresh milk instead of evaporated milk. cream of mushroom is also nice if it's campbell's. i dont like knorr kasi for me it makes the taste not so natural.

ako I use alpine evap masarap siya compared to using alaska and fresh milk lahat ng friends ko na nakatikim ng carbonara ko ang sabi nila sobrang sarap!  ;D

^full cream kasi yung alpine sis :) almost the same lang din yun sa fresh milk. the difference siguro is shelf life. mas matagal mo pwede store ang evap kesa fresh milk.

Here's my recipe:

For the cream:
  • Garlic
    Onion
    Peper
    Butter
    Fresh Milk
    grated cheese (quick melt is preferred but other cheddar cheese can also be used)
    nestle cream
    *optional: campbell's cream of mushroom
    *optional: egg
    Parsley fresh, chopped
    basil (dried or fresh, chopped for add on flavor)
    knorr cube (beef, chicken, shrimp depending on your meat) - this is optional to those who are health conscious)


For the meat, you may try the following combination:
  • chicken fillet and mushroom
    ham, bacon and mushroom (make sure to fry bacon and ham until slightly toasted)
    tahong, halaan, squid and shrimp (i preferred na cooked and nabalatan na para mas madali kainin :))
    meatballs and mushroom (cook the meat balls first)

any kind of pasta will do :) cook and drain

saute the onion then the garlic in butter. make sure not to burn kasi it will leave bitter taste. add the cream of mushroom, nestle cream and fresh milk. stir constantly and add a little water if necessary and put to boil. add the cheese. stir constantly until the desired consistency. add pepper. then add desired meat. add beaten egg if desired. then add basil and parsley.

kung seafood ang mix mo, gamitin mo yung pinaglagaan ng seafood para mas malasa. same goes with chicken.

mix the pasta and the sauce. serve hot. sarap!  ;D

my mom also puts a lot of nestle cream to her carbonara. then maraming parmesan. yuh-mmmeee!

I saw a recipe in Pioneer Woman which I think is bechamel sauce-based.  I'll try if it's good and share the results.  I'm tempted to try most of the recipes here.  Ang sasarap!  Especially those with cream for the tangy taste  :)
