^ turbo oven lang din ang meron ko sis.  pwede ba yung baine-marie sa turbo?  yung procedure na ginagawa ng iba sa cheesecake nila para di mag crack.

just made oreo cheesecake today. it's my first try. so far okay naman sya and madali lang gawin. mejo pricey ang ingredients specially if you are using Philadelphia cream cheese but with the taste guaranteed the quality.

i have several photos nung ginagawa ko sya but will post it once nakunan ko na yng mismong oreo cheesecake ( cooling sa fridge, and will top it oreo crumbs ulit). so happy kasi hindi naman nag collapse yung cheesecake after ko i-bake. yng iba kasi bumababa.

here's the recipe:Ingredients

Filling
1 1/2 pound cream cheese
1 cup sugar
5 large eggs
1/4 teaspoon salt
2 teaspoon vanilla
1/4 cup flour
8 ounces sour cream
5 Oreo cookies (coarsely chopped for the batter)
10 coarsely chopped Oreo cookies for the topping

Crust
1 1/2 cup Oreo cookie crumbs (about 25 Oreo cookies finely chopped)
2 tablespoon melted butter
9″ spring form pan (buttered on bottom and sides)

1. Mix melted butter with Oreo crumbs and press in the bottom of the spring pan and 1 1/2″ up the sides, set aside.
2.All Ingredients must be at room temperature before beginning.  Beat cream cheese with a mixer on low until fluffy.
3. Slowly add sugar and continue beating cream cheese until mixed well.
4. Add eggs one at a time and continue to beat until blended.
5. Measure the vanilla, salt and flour, pour into cream cheese and egg mixture and beat until smooth. Add the sour cream and beat.
6. Stir in the coarsely chopped oreo cookies with a spoon.
7. Pour cream cheese into the spring pan and place the nine coarsely chopped Oreo Cookies on to of the cream mixture.
8. Place pan on the top rack and in the middle of a preheated oven at 325 degrees F and bake for one hour and 15 minutes.
9.After that time, keep oven door open and let the cheese cake stay in the oven for one hour. Remove from oven and let cool enough to place in the refrigerator for 24 hours.

Serves 4-6

Note: i only used 2 pack of cream cheese and i adjust the other ingredients since yung spring pan ko is maliit lang and aapaw yung mixture if susundin ko yng saktong ingredients.

here's another tip i got in making the cheesecake:

Todd Wilbur suggests baking cheesecakes in a water bath to achieve a texture closer to restaurant quality. The water keeps the cake moist as it cooks and prevents it from cracking.

A springform pan lined with parchment will also help to get the cake out of the pan more easily when it has cooled as will chilling the crust in the freezer while you prepare the filling.

For extra flavor add a 1/4 tsp. cinnamon to the crust mixture while mixing it and you can add 1/2 cup sour cream and 2-3 tsps. sugar to the whipped cream topping. For an extra creamy cheesecake add another egg to the filling.

Another recipe for topping:
TOPPING:

2 c. sour cream
1/4 c. sugar
1 tbsp. vanilla

To make the topping, turn the oven to 350°F. Mix the sour cream, vanilla and sugar together. Spread on top of the warm cheesecake. Bake for 7 minutes. Refrigerate. Garnish with Oreo cookies and rosettes of whipped cream.
