LANG LANG

1 small            chicken
2 stalks        celery
1 bunch        spring onion, chopped
1 teaspoon        peppercorns
1/2 kilo        ground pork
1/3 kilo        shrimp, shelled and chopped
2 pieces        eggs, beaten
200 grams        sotanghon, soaked in water
10 grams        wood ear mushroom (tengang daga), soaked in water
1 cup            chicharo
1 head            garlic, sliced thinly and fried until golden
fish sauce

In a casserole, put together chicken, celery, 1/2 bunch spring onion and peppercorns. Add about 12 cups of water and bring to a boil. Lower heat and simmer until chicken is tender. Remove chicken and flake.
Combine ground pork, shrimp, eggs, salt and pepper. Form into balls about 1/2 inch small. Set aside.
Bring the chicken to a boil. Drop the pork and shrimp balls. Lower the heat and add the sotanghon, tengang daga and flaked chicken. Season with fish sauce, add the chicharo last and do not overcook. Serve with toasted garlic and spring onion on the side.

i love cream-based soups.not for the diet concious!

i especially love chowders (potato-bacon,clam);what i do,i saute the clams in butter,then add finely chopped onion till its a bit browned (translucent and brown ang edges but not totally brown) then i add celery,chopped carrots and sometimes with potatoes;i then add fish stock (pwede rin ang fish cubes if you're in a bit of a hurry!);i then add milk then single cream...i add paprika,some white pepper powder,and a little bit of lemon juice.sarap!

same thing din ang method ko for the potato bacon.but instead of using butter,i just fry the chopped bacon then i just use cooking spray-nago-oil pa rin kasi ulit yung bacon inside the soup even if u get the majority of the oil out.if you're on diet mode,u can opt for turkey bacon-actually mas prefer ko na ito kesa pork.i use oscar meyer's mostly.

i top this with croutons.hay nako.super nakakabusog.

recipe of clam chowder anyone?

from http://www.foodnetwork.com/recipes/alexandra-guarnaschelli/clam-chowder-recipe/index.html :)

Ingredients

    * 3 1/2 to 4 cups water
    * 5 pounds littleneck clams, scrubbed in cold water until no grit remains on the shells
    * 1/2 pound pre-sliced bacon, cut into 1-inch slices
    * Dried aleppo pepper (or any other "smoky" dried pepper) for dusting
    * 2 tablespoons butter
    * 2 stalks green celery, washed, trimmed and sliced into 1/2-inch rounds
    * Salt and pepper
    * 1 small yellow onion, peeled and diced
    * 2 leeks, cleaned and diced, white and light green part only
    * 2 cloves garlic, peeled and minced
    * 1 cup dry vermouth
    * 4 Yukon gold potatoes, washed and cut into 3/4-inch dice
    * 2 bay leaves
    * 2 cups cream
    * 1 tablespoon chopped thyme leaves
    * Worcestershire sauce, to taste
    * Hot sauce, to taste
    * 2 tablespoons chopped tarragon leaves
    * 1 teaspoon chopped dill
    * 1 tablespoon dry Marsala
    * Baked Bread, for dipping, recipe follows

Directions

Place a large pot or rondeau on the stove and add 3 cups of the water. Bring the water to a boil and add the clams. Cook until they pop open. Though it is important to stir the clams as they cook, take care because the shells are fragile and break easily. Put the clams in a colander and reserve the cooking liquid. Shell the clams, discard the shells and reserve the clam meat and the liquid separately.

In another large rondeau or pot, add the bacon and cook over medium heat, until crispy. Drain the bacon with a slotted spoon onto a paper towel, dust with the aleppo pepper and set aside. Add the butter to the bacon fat in the pan and quickly saute the celery rounds, about 1 minute. Season with salt and pepper. Remove with a slotted spoon and set aside.

Add the onion, leeks, and garlic to the rondeau and season, to taste, with salt and pepper. Cook until they become tender and translucent, 3 to 5 minutes. Add the vermouth. Continue to cook until almost all of the liquid has evaporated, 8 to 12 minutes.

Meanwhile, in another large pot, combine the diced potatoes, bay leaves, 2 cups cream and the chopped thyme leaves. Bring the mixture to a gentle simmer and cook until the potatoes are tender, 5 to 8 minutes. Season with salt and pepper, to taste. Add a splash of Worcestershire sauce and hot sauce. Stir to blend. Taste for seasoning.

There is a good chance there will be grit in the clam cooking liquid. Strain it and add it to the onion/leek mixture. Stir to blend. Taste for seasoning. Combine with the potato mixture. Add the clam meat, reserved celery, tarragon, and dill. Remove and discard the bay leaves. Add Marsala. Taste for seasoning. Add more cream (and remaining water, if needed). Top with the bacon just before serving.

Baked Bread for Clam Chowder Dipping:

    * 8 (3/4 to 1-inch thick) slices sourdough bread
    * 3/4 stick unsalted butter
    * 4 cloves garlic, peeled, halved lengthwise and cut into thin slices
    * Kosher salt
    * Freshly ground white pepper
    * 2 teaspoons paprika
    * 1 teaspoon dill seeds

Preheat oven to 350 degrees F.

Arrange the bread slices on a baking sheet in a single layer. In a small skillet over low heat, melt the butter and add the garlic. Season with salt and pepper. Heat gently for 1 minute and use a pastry brush to coat the bread slices. Pour any remaining butter into the bottom of the baking sheet and dust the bread with the paprika and the dill seeds.

Place the tray in the center of the oven and bake until the slices are browned and crispy, 12 to 15 minutes. Remove and allow to cool for a minute before serving alongside the soup.

easy yummy molo soup

for the molo:
pork giniling 1 pound
1/2 teaspoon sesame oil
white ground pepper (kung wala pwede ang black)
dash of salt
molo wrapper
1 teaspoon light soy sauce
1 fresh egg

for the broth:
1 chicken breast (boiled and shredded, set aside the broth)
1/2 chicken cube
minced garlic
minced onion
dash of salt and pepper
chopped green onions
toasted garlic

procedure:

1. combine ground pork, white pepper,salt,sesame oil, soy sauce and egg in a bowl. mash them evenly.

2. get a molo wrapper, get a teaspoon of your meat and seal the edges using water or egg white (triangular shapes). make as many as you can until you finish all the ground pork. set aside.

3. saute garlic and onions in oil. add shredded chicken, a dash of salt and black pepper. add 1/2 chicken cube. then add the broth and let it boil.

4. while the broth is boiling, drop the molos you made and add cut molo wrappers too if you want. wait until the molos are cooked then let it simmer for another 5 minutes or so.

5. sprinkle chopped green onions on top then turn the heat off.

6. serve in a bowl topped with toasted garlic.

SSSARAP! I took a picture of it:

Patola con Misua

1 big patola, peeled and sliced
oil
garlic
onion
patis
ground pork
water
misua
salt and pepper to taste

Sautee garlic, onion, patis, and pork in oil. Cook until pork is done. Add patola and water. Bring to a boil. When patola is almost done, dip in the misua and sprinkle with salt and pepper to taste.

Easy, yet healthy and delicious! ;)

You can also substitute carrots sa patola. Ayaw kasi ng mga anak ko ng patola kaya I looked for a substitute and experimented. They like carrots naman so I tried it and it worked. :)
