Last June 9, we were one with the World Wildlife Fund (WWF) to celebrate World Coral Triangle Day. The Coral Triangle spans a roughly triangular area of the waters of Indonesia, Malaysia, Papua New Guinea, Philippines, Solomon Islands and Timor-Leste, and is the epicentre of marine biodiversity. In fact, most marine riches like fishes and other seafood come from the Coral Triangle.

Abuse and neglect of these resources, however, have caused the WWF to take action. The movement started in 2007, and this year, the organization has tapped celebrity chef and marine resources advocate, Bobby Chinn to frontline the campaign. His show in World Cafe Asia in Discovery Travel and Living has educated and enticed food enthusiasts to try out and embrace Asian cuisine. He was also awarded the 'Best Entertainment Presenter' at the Asia TV Awards in 2007.

“The worldwide demand for tuna, live reef fish, and other marine products continues to grow–at a frightening environmental cost to the Coral Triangle. Through our partnership with Bobby Chinn and Hamilo Coast in celebrating Coral Triangle Day, we hope to emphasize the need to rehabilitate the Coral Triangle’s reefs from decades of damage and build a sustainable means of livelihood for fishermen,” says WWF-Philippines Vice President for Conservation Programs Joel Palma.

Bobby Chinn shares that exotic dishes like sharksfin soup destroy the balance of the ecosystem. “Sharksfin are tasteless. The taste that you love about sharksfin soup? That’s from chicken stock.” The fascination with sharksfin means 73 million sharks are slaughtered each year. Snappers, however, are great subs for sharskfin, as Bobby showed us when he prepared his seared snapper head dish with dipping sauce.

Having spent the whole afternoon with him, the FN Team took the opportunity to hit him up with a few questions about cooking and his secret to becoming globally famous.
