Options for beginner vegetarians

May 16, 2008 by FN's Shar Bareng

Trying to be a vegetarian? This month would be a very nice to start as World Vegetarian Week (May 19 to 25) is quickly approaching!

The good news is that tasty options don't have to be limited to vegetarian food. Our friends from PETA Asia-Pacific gave us good ideas for yummy veggie dishes, such as kare-kare with black beans instead of shrimp. Tofu and peanut sauce also replace the meat in chop suey, while pancit bihon can take on a new meaning when cooked in coconut curry. If you're cooking with coconut milk, it might be a good idea to try ginataang puso ng saging and vegetarian laing!

And yes, while a vegetarian diet can do wonders for your weight, it might help you more. PETA does the math: Vegetarians are one-third as likely as meat-eaters to be overweight, and vegans are one-tenth as likely to be obese. In the long run, vegetarians and vegans have much lower rates of chronic diseases such as heart disease, diabetes, and even various types of cancer.

Here's a nice idea to toy with: How about cheeseless pizza topped with roasted vegetables? For more ideas you can start your veggie diet with, check out www.vegcooking.com.
