Cutting back on your budget for Christmas gifts this year? Why don’t you give gifts you’ve made yourself? It will certainly be less expensive, and people will appreciate the effort, too.
During another visit to Heavenly Chocolates, resident chocolatier Benjie Pedro shared how to make yummy chocolate treats you can give as gifts for the holidays. Who can refuse chocolates, after all? They are economical and so easy to make - even kids can do it! All it takes is a bit of creativity when it comes to decorating the chocolates and putting them in cute containers. Chocolate drops
Ingredients:
1/3 cup Molding Chocolate (P225 for 400g, Heavenly Chocolate; comes in three variants: dark, white, milk chocolate) Different types of nuts (including whole almonds, peanuts, etc.) Raisins (you may experiment with other fruits you prefer) Candy sprinkles
Procedure:
1. Melt 1/3 cup molding chocolate in a double broiler. No need to add water to the mix. To keep the chocolate from hardening after you take it off the stove, place a bowl of hot water underneath the pan.
2. Pour half the chocolate into a piping bag. You can make a piping bag out of a clear plastic bag by pushing all contents toward one corner to form a cone then snipping a bit off the tip.
3. Squeeze the bag to pour the chocolate into mini cupcake liners. Form cookie-like drops by swirling from the outside to the inside. Make sure not to make the chocolate rounds too thick. Refill the piping bag as needed.
4. Decorate your chocolate drops with your choice of nuts, raisins, and/or candy sprinkles. Be sure to coat everything in chocolate so your nuts won’t turn to mush with the moisture.
5. Let your chocolate drops cool in the fridge for five minutes. When the chocolate has hardened and settled, store your chocolate drops in decorated jars.
Chocolate brittle
Ingredients:
1/3 cup Molding Chocolate (P225 for 400g, Heavenly Chocolate)
1 cup chopped almonds (or peanuts)
Procedure:
1. Melt 1/3 cup molding chocolate in a double broiler.
2. Pour one cup of nuts into the melted chocolate and mix. Make sure you’ve coated all the nuts in chocolate.
3. Pour the mixture into a pan or plastic tray lined with wax paper then flatten it with a spoon. The bigger area the chocolate mix can cover and the thinner you make it, the better!
4. Let the flattened chocolate and nuts mixture cool in the fridge for five minutes.
5. Cut the chocolate brittle into bite size pieces or shape them with cookie cutters. Then store the chocolate brittle in decorated jars.
* To make chocolate clusters, instead of flattening the chocolate mixture on a pan, scoop teaspoonfuls of the mix into mini cupcake liners. You can also use potato crisps or cornflakes instead of nuts!
