250 grams calabasa cut into cubes
1 large potato cut into cubes
6 cups chicken broth or 2 pcs chicken cubes
1/2 cup milk or whipped cream
5 cloves garlic
1 medium onion sliced
1 tbsp butter
salt and pepper to taste
1/2 teaspoon parsley
1. Heat chicken stock, add garlic, salt and pepper. Bring to a boil, Add calabasa and potato cubes reduce heat to low, and simmer for 30 minutes uncovered until soft
2. Puree the soup in small batches (1 cup at a time) using a food processor or blender until smooth
3. Return to pan, add butter and saute onion add pureed soup and bring to a boil again. Reduce heat to low, and simmer. Stir in heavy cream or milk. Pour into soup bowls and garnish with fresh parsley.
