Let's make this a Pasta Cookbook
I have some pasta recipes I would like to share, for those who are looking for light and healthy pasta cravings

since I'm a vegetarian, there is no meat, poultry, fish, and eggs involved in my recipes

1. Garlic Pasta
1 head garlic, crushed finely (you can add some more if you desire)
generous amount of olive oil
salt and pepper to taste
1/4 cup black olives (optional)
italian seasoning or fresh herbs like parsley, basil, oregano
handful of capers (optional)
cheese (as desired)
1/2 kg long pasta
heat the olive oil, add the garlic and slow cook until a bit brown. Do not burn. saute as well the italian seasoning/herbs. Add the capers and olives last. Remove from heat and toss the pasta and cheese. Yum!
2. Nut and Herb Pasta (learned this from a cooking show)
1 cup nuts (can be a mixture of peanuts, cashew, pine nuts. but pine nuts is best)
1 bunch of fresh parsley
1 handful of basil
a few oregano
salt and pepper to taste
^grind everything above in food processor until very fine. it should be a bit powdery.
1/4 kg long spaghetti (or more) cooked as directed
In a bowl, just toss the mixture with the pasta and serve!

you may add cheese or olive oil if desired
