HELP - PWEDENG IHABOL ANG EXTRA CARAMEL TOPPING?
« Reply #141 on: January 01, 2014, 03:02:49 AM »
Sissies,

while caramelizing the sugar, nasunog ko the first time so hindi ko ginamit but then ang dami kong nasunog na asukal and nasayang lang.

Our Leche Flan only uses 1 whole egg and the rest, yold lang. we also put vanilla extract para mabango. my mom also strains it really well para no bubbles but we like it better na bubbly for some reason

add a little cooking time sis... ang alam ko mas malabot ang steamed compare sa baked leche flan

I tried this recipe and masarap siya, smooth ang leche flan

Ingredients

12 egg yolks (from large eggs)
    1  can  condensed milk
    1  can evaporated milk
    9 tablespoons sugar (brown)

**Para sa 3 llanera ito

In each llanera, place 3 tablespoons sugar. Set llanera over low heat until sugar is melted and golden. Using tongs, move llanera repeatedly over flames to prevent sugar from burning and to distribute melting liquid on bottom of mold . Remove from heat and allow caramel to cool and harden.
In a medium bowl, combine egg yolks, evaporated milk and condensed milk. Gently stir in a circular motion until blended. With a cheesecloth, strain egg-milk mixture. Pour strained mixture into prepared llaneras.
Cover llaneras with foil and arrange in a wide, oven-safe dish with about 1-inch of water (water bath). Bake in a 375 F oven for about 50 minutes to 1 hour or until toothpick inserted in the middle of custard comes out clean. Remove from oven, allow to cool and refrigerate to set. To serve, turn flan over on a serving plate, ending with caramel on top.

Notes

Never beat the egg-milk mixture but stir gently in one circular motion to prevent bubbles. The real secret to smooth and creamy leche flan is straining the egg-milk mixture with a cheesecloth before pouring into molds.

My experiment is a success. Since I don't have a steamer and I really wanted to have leche flan, I baked one using my trusty old oven toaster. I just added water to the pan that goes with it and baked for 45 minutes... Oh, I made use of whole eggs since I'm not in the mood for egg whites omelette. And I used a blender to mix my eggs, milk and cream... Not bad for a first timer 😄

here's mine..gamit ko din ang recipe na to for my custard cake :)

4 whole egg (lagi akong gumagamit ng hand mixer to make sure na well beaten ang egg)
1 can condensed milk
1 can evap milk (or same amount of coconut milk - sometimes I am craving for coconut flan)
a tsp of vanilla (or same amount of any citrus zest)

sugar for caramel.

cooking time: 1 hour since I am using induction stove, pos 80 lang temp...
kung sa oven naman, 175C for 50 mins :)
smile lang...
