sis try this. i got the recipe from allrecipes.com and ever since we discovered it hindi na kami gumagamit ng mix.

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

got this from a cooking show sa Qtv... di ko na maalala ang measurement

all-purpose flour
baking powder
salt
milk
vinegar
sugar
eggs

1. mix flour, baking powder, sugar and salt
2. separate egg whites from egg yolks, beat the egg whites hanggang maging parang icing (meringue)
3. put a teaspoon of vinegar sa milk to make a sour cream
4. mix the flour mixture with the milk, then slowly add the meringue
5. no need to put oil or butter sa pan kasi hindi naman dumidikit yong batter sa pan

Yung neighbor namin, nagwowork sa pancake house. What they do to make the pancakes fluffy is to separate the egg whites, beat until foamy, then fold into the batter. Ayun. Fluffy and light pancake.

my basic pancake recipe: good for 2
1 c flour
1/2 tbsp baking powder
pinch of salt
1 tbsp sugar
1 large egg
1 tbsp melted butter
1 c milk
butter for frying

i just put them in a blender then blitz away ;D if you want to do it by hand, then mix dry ingredients first then wet ingredients then combine them. I usually leave it for about 10-15min in a jug before using it. then cook them.

for variations naman:
banana and honey: substitute honey for sugar then add 1/2 c mashed banana
apple and cinnamon: add 1/2 tsp cinnamon and 1/2 c grated apple
coconut and mango: use 1/2 c coconut milk + 1/2 c milk instead of 1 c milk. top pancakes with sliced mango and lime syrup (1:1 ratio of lime juice and sugar, bring to a boil until syrupy in consistency then cool)

savory pancakes eto lang meron ako:
potato and onion: omit sugar. add 1/4 c grated potato and 1/4 cup sliced onions. when cooking, sprinkle with grated cheese on top.
spinach and feta: omit sugar. add 1/2 c chopped spinach. while cooking, crumble some feta on top.

Classic Pancakes

Try making your own pancakes from scratch!

Makes 16 to 20 pancakes \ Prep Time 10 minutes \ Cooking Time 15 to 20 minutes

2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon salt
1 tablespoon sugar

2 cups milk, at room temperature
4 tablespoons melted butter, cooled
2 eggs

1  In a large bowl, combine all the dry ingredients. Whisk to blend.

2  In another bowl, combine all the wet ingredients. Whisk to blend, then pour into the bowl of dry ingredients. Using the whisk, mix just until dry ingredients are moistened; dont try to make the batter smooth or the pancakes will end up tough.

3  Using a 1/4 measuring cup, portion the batter onto a nonstick pan over medium-low heat. When bubbles begin to form and burst on the surface, flip the pancake over and cook 1 minute more. The pancakes should be a nice medium gold.

4  Place on a plate and cover with a dry tea towel to keep warm. Keep going until you have used up all the batter. Serve immediately.

Hi girls! Please share naman your tips on how to make fluffy and perfect pancakes, yung parang pancakes ng Mcdo or Jollibee? :) Laging fail kasi ako sa pagluluto nito kahit sinusunod ko naman yung instructions sa Maya or Pillsbury ready-to-cook pancake mix. Laging sunog e pero yung edges hilaw? I don't know ano ginagawa kong mali.  :'( I'm tempted to buy a pancake maker na tuloy.

sis, yung pancake mix (maya, pillsbury), wag mo masyado i-over mix, hayaan mo na medyo lumpy pa yung batter. Tapos use a non-stick pan. Lagay mo yung batter tapos hintayin mo mag-bubbles yung taas, pag medyo madami ng bubbles (wag mo hintayin mag bubbles yung buong taas), i-flip mo na!

Wag din masyado madaming batter yung ilagay mo para lang kumapal/maging fluffy kasi mas lalong mahirap maluto or magiging hilaw yung gitna.

Hope this will help! :)
