bubbles is caused by overmixing. try not to mix it too much.. well im curious how to make flans that are firm and yet soft.

A nurse gave me leche flan. Sobrang panalo!!! Ang sarap grabe. Not too sweet, so creamy, basta super sarap.

one way is, kapag ilalagay na sa llanera, strain it with cheesecloth or panyo (handkerchief) pino kasi yung fiber nito, magiging creamy yung consistency nito.

kung walang oven, then use stove na "uling", para slow cooking ito.

my style of making leche flan naman is i use oven. I do caramelized the sugar sa oven mismo, no need to mix water. Just put sugar lang sa baking dish or llanera then even mo sya kusa sya mag melt so di mo na kailangan ipantay once nag melt. Kasi normally yng  iba problem is ang bilis mag candy ng sugar so di mo na maipantay sa llanera diba. Basta babantayan nio lang yng sugar magmelt para di masunog.
 
I use fresh milk not evap. Mas healthy and creamy. 1 can condensed milk, 1 can fresh milk (can ng condensed milk din gamit) taos 7 eggs (5eggyolks, 2 eggs) mix lang yan slowly para di magbubbles. Tapos teaspoon of vanilla or lemon. Pag iallagay na sa baking dish or lanera, salain sya para pino.

I bake it @ 175c for 35 mins

Another tips is, di ko hinihintay na mag insert ako toothpick pag clean luto na [textspeak!] itodin minsan reason kaya me na overcook na leche flan. What i do is once the leche flan is wobbly and parang gelatin hitsura nia, inilalalbas ko na sya. Kais when you set it, pag na cool na sya, titigas pa sya eh. Kaya sa min super soft and smooth pag kinain. Perfect sya. ;-)

di kasi lanera gamit ko eh, baking dish. pero if estimate ko sa regular size na lanera mga 5 siguro.

10 pcs egg yolks
1 milkmaid condensed milk
1 evap milk
lemon rind
vanilla 1 tsp.

do not over mix.. and be carefull lang din sa pag mix kasi baka mag bubbles..
then salain..
can make 5 small llanera's..
DO NOT OVER COOK.. approx 30 mins lang if small llanera if big around 45 mins..

yung mommy ko nilalagyan nya ng kunting all purpose cream yung mixture ng leche flan. tapos naglalagay sya ng kape o kaya dayap. ang sarap! ;)
