hi sisses!
pa share naman ng secret sa paggawa ng leche flan. yung makinis at parang siksik. gumawa kasi ako kaya lang parang butas butas siya at nadudurog agad.

What I do para makinis and para walang bubbles, I pass it through a sieve several times, after I mix all the ingredients. Much better if katsa ang gagamitin mo pang sala.

use only egg yolk. mga 12 pcs eggyolk then 1 big condensed i big evap

pag isteam mo na siya wag mo idikit yung llanera sa steamer basta dapat may space in between para pino yung sides niya.

once pa lang ako nakagawa pero perfect naman.. sinunod ko lang yong nasa recipe. May 8 egg yolks tska 2 eggs pa na kasama egg white. Gumamit din ako ng strainer nung nilagay ko na sa llanera. Di ko ini-steam pero bake ko ng bain marie.

i love lechel flans! what we do, more egg yolk + left overs ng napiga ng kalamansi na isasama sa mixture while stirring + katsa while pouring sa llanera. pino and di malansa. the calamansi enhances the flavors of the leche flan.

share ko lang the leche flan recipe that i got from http://panlasangpinoy.com/2009/07/02/leche-flan/

it was my 1st time to make leche flan and it turned out perfect, not too sweet din. hubby loved it!

Ingredients:
10 pieces raw eggs
1 small can condensed milk
1 cup fresh milk (or evaporated milk)
1 cup granulated sugar
1 tsp vanilla extract

Cooking procedure:
1. Using all the eggs, separate the yolk from the egg white (only egg yolks will be used).
2. Place the egg yolks in a big bowl then beat them using a fork or an egg beater
3. Add the condensed milk and mix thoroughly
4. Pour-in the fresh milk and mix well
5. Put the mold (llanera) on top of the stove and heat using low fire
6. Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color
7. Spread the caramel (liquid sugar) evenly on the flat side of the mold
8. Wait for 5 minutes then pour the egg yolk and milk mixture on the mold
9. Cover the top of the mold using an Aluminum foil
10. Steam the mold with egg and milk mixture for 30 to 35 minutes.
11. After steaming, let the temperature cool down then refrigerate
12. Serve during dessert. Share and Enjoy!

tip: try not to whisk too hard to avoid bubbles. if there are still bubbles, try using a spoon to scrape it before steaming. or pass through a sieve just like sis ric does.

This came from the recipe book nung friend ko:

Leche Flan

1 can (Big) evaporated milk (I use Alpine or Alaska)
1 can (Big) condensed milk
10 egg yolks (12 pag gusto mo malinamnam talaga)
1 egg white
1 teaspoon of vanilla extract

For the caramel:
1 cup brown sugar
3/4 cup water

Cooking Instructions:
1. In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize.
2. Pour the caramelized sugar into aluminum molds -Spread the caramel on the bottom of the molds.
3. Mix well the evaporated milk, condensed milk, egg yolks, egg white and vanilla extract.
4. Gently pour the mixture on top of the caramel on the aluminum molds. Fill the molds to about 1 to  1 1/4 inch thick.
5. Cover molds individually with aluminum foil.
6. Steam for about 20 minutes (the traditional way to make Leche Flan is by open-air steaming on either an open cooking fire or stove top)

OR
   Bake for about 45 minutes. Before baking the Leche Flan, place the molds on a larger baking pan half filled with very hot water. Pre-heat oven to about 370 degrees before baking.
7. Let cool then refrigerate.

here's our family recipe for Leche Flan:

10 egg yolks
1 big can of evaporated milk
1 big can of condensed milk
1/2 - 2/3 cup of sugar
rind of dayap

Basta the above is the proportion, depende na kung gaano kadami ang gagawin...

After combining all the ingredients (don't overbeat because this will lead to a bubbly flan),  strain the liquid using a cotton tshirt. (we prefer a tshirt/katya para fine yun sieve).

After transferring sa lanera (lanera should have caramel at the bottom na), remove the bubbles. avoid din ishake yun lanera para di sya magcreate ng bubbles sa gilid.

cover with foil - see to it that the flan/liquid does not touch the foil.

steam for 30-45 minutes..

you'll get a nice creamy leche flan...

question lang po, yung pag steam po ba is one by one or pwedeng patong patong? and yung 10 egg yolks po ba ilang llanera ang kayang gawin? first time to do this po and i'll just follow your instructions...tia

^ pwede [textspeak!] din patong-patong, but it may take awhile pra maluto yun leche flan... parang 4-7 lanera kya ng 10 eggs na recipe...

you may also like to add vanilla or almond flavoring pra my twist :-)
