tried this recipe na! the cupcakes are really good. good thing ni-grate ko siya dun sa fine grater at hindi dun sa grater na pang-cheese na ang output ay lengthwise. hehe. one can not make out that you used carrots in it, oh well except my son though.

i tried the cream cheese frosting, too. pero hindi successful.

bakit ganun, hindi siya nagse-set?? i used kraft cream cheese na nasa bote nga pala. help naman sa mga nakagawa na nito. thanks!

^ sis try mo gumamit ng cream cheese talaga (parang dairy creme ang hitsura) sa supermarket, instead of kraft cream cheese. hth.

sis, hindi ko pa na-try na manual eh but i think pwede rin namang manual mixing. as for the type of bananas, 2 nang type ng bananas ang na-try ko at parehong okay naman. sorry hindi ko sure kung lakatan nga tawag dun. pero basta, yung ordinaryong saging na matamis. hehe.

Regarding the carrot cake frosting. I used the cream cheese (bar type) years ago and it turned out okay. I left the bar outside (room temperature) hanggang nawala na ang lamig and medyo malambot na and used a fork to 'mash' it so it would be easier to blend in with the other ingredients. Hope this helps!

Chocolate Cupcakes

Ingredients
1/3 cup plus 1 Tablespoon Karo corn syrup
1 cup date sugar or white sugar
4 egg whites
1 cup flour
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1/2 cup skim milk
2 teaspoons vanilla extract

Chocolate Frosting:
3/4 cup sifted powdered sugar
1 teaspoon vanilla extract
1 Tablespoon unsweetened cocoa
1 Tablespoon hot water

Cream together syrup, date sugar, and egg whites. Add 1/2 cup of flour and mix well. Add unsweetened cocoa, baking soda, milk, and vanilla. Add rest of flour and mix well. Line 12 muffin tins with cupcake liners and fill to 3/4 full. Bake in 350-degree oven for 20 minutes.

Frosting: Mix all and frost cupcakes.

yes sis, you can also use brown sugar. pero if you're concern about is the color no problen with using white granulated sugar kasi, it'll still turn out orangy in color.

salamat sa tip about the cream cheese frosting, too. will try that kapag nasa mood ulet mag-bake.

hello jan888 i only used a whipper na stainless and spatula lang for #9.. wala rin akong mixer kasi.. it can surely be done without the mixer..

Hi cind3r3lla.. Pasensya na ha, it's regarding your banana cupcake recipe.. I just need to know if the banana batter mixture can be poured to a muffin pan instead of a cupcake pan. okay lang sis, wala namang magiging problema.

by the way, i will be making cheese cupcake sa birthday ng baby ko. hindi ko pa na-try yung recipe pero it looks promising sa ingredients palang. hehe. nakita ko lang sa isang multiply site. ano kayang bagay na icing for cheese flavored cuppies?

Funny lang cos I am watching a vid from YouTube now about how to bake and decorate cupcakes and here I am in this thread.

I will start to bake when we move into our new house na since the kitchen's fully-equiped na.

I remember, I was craving for carrot cupcake the whole time when I was pregnant with my first-born. My tita makes me carrot cupcakes with buttercream frosting. Sarap!

Will have to email her para she'll send me the recipe. Meanwhile, keep your recipes comin'.

I'll email her muna. It's so simple lang and you can find the ingredients sa pantry nyo mismo. The only thing na dinadayo namin sa grocery is the walnut.
