hi, i tried the cupcake carrot cupcake with cream cheese frosting (joyofbaking)and it's delicious naman! tama [textspeak!] siya di ganun katamis and moist sya (dunno if that's because of the oil or what). i will make again today pagkanakabili na ako ng carrots ulit. request ng hubby ko hehe.

here's what i did:

Carrot Cupcake

Ingredients:

2 large eggs
1 cup granulated white sugar
1/2 cup sunflower oil (or canola oil per recipe)
1 tsp. vanilla extract

1 cup all-purpose flour
1/4 tsp. baking soda (sodium bicarbonate)
1/2 tsp. of baking powder
1/4 tsp salt
1 tsp. ground cinnamon

1 1/2 cup grated carrots (about 2 large carrots)
1/4 to 1/2 cup chopped nuts ( i used hazelnuts, roasted it for 5-10mins.  in the oven & chopped afterwards)

Before preparing, preheat oven at 350 F/180 C.
1. Peel & grate the carrots.Set aside
2. Chop the nuts. Set aside.
3. Whisk flour, baking soda, baking powder, salt & cinnamon.. mix well. Set aside your flour mix.
4. Beat eggs until frothy (I just beat the egg using a whisk).
5. Add sugar. Beat until it thickens.
6. Gradually add sunflower oil in a steady stream. Beat well.
7. Add vanilla extract.
8. Add the flour mix, gradually. Blend well.
9. Fold in grated carrots & nuts using a spatula/scraper.
10. In a muffin pan, place cupcake liners.
11. Fill about 3/4 of it using a spoon or laddle. Medyo puno oks din kasi di sya ganun kaalsa.
12. Bake for 20-30 minutes. Check after 20mins with a toothpick. If it comes out clean then it is done..
13. Let it cool first on a wire rack.

makes about 10pcs.

ako din wala me idea mag bake- pero nakabili na ko ng pang cupcake na lalagyan spatula mixer but hindi ako marunong gumawa - sana the Gt will help us to bake easier lalo ng tayo wlang idea as in :)

sis try mo sa baker's depot.. they have lots of branches na iba iba lang ata yung name. marami akong nabiling ingredients na sa kanila and mostly yung mga not found sa supermarkets they offer it sa stores nila.

sa san juan, along n. domingo st. malapit sa pinaglabanan shrine (nearly katabi) the other baker's depot daw sa commonwealth, and cubao but i have not been to other baker's depot and yung mga "sister shops" nila. yung sa san juan lang. ;)

achie08rn, may muffin pans , springform pans, cupcake liners ba sa BAKER's DEPOT? ako rin hands-on sa pag-bake.. newbie homebaker kung baga.  ;) i've tried cupcake, pies, pizza so far.. di pa ako ulit nag bake kasi holiday season na.. christmas vacation na muna with our relatives/family.

ask ko na rin kung paano pumunta pag manggagaling ng greenhills.
mura ba mga tinda nila sa baker's depot?

curiousmama10 meron din mga muffin pans but im not sure if they have stocks of other types ha. kasi super six months ago pa ako huling punta doon kasi im now overseas. but my sis still buys ingredients doon. well compare sa chocolate lovers, medyo mas mura yung mga ingredients tapos lagi may discount if your purchase exceeds 300 pesos.. (basta chika mo lang si ate hihi)

sis, i remember tabi sila nung laundry shop then yung pinaglabanan monument. if your coming from greenhills go straight until you reach the intersection of wilson - greenhills - santolan - n. domingo. turn left (pldt) papuntang n.domingo then direcho lang (sundan mo lang yung mga G liner bus going to quiapo) landmark mo: you'll pass the pinaglabanan church, mga 3 minutes na lang yun, then again, there's an intersection pag nakita mo na yung monument, look to your left,yun na yun. ;)

this is my new passion, cupcakes! i suggest that you start with the ready mix cakes muna, ex. Betty Crocker or Duncan Hines then pag kaya mo sundan yung recipe na yun and started loving it then pwede ka na gumawa ng starting from scratch cakes. Ako kasi i started making cupcakes using  duncan hines extra moist cakes, i find betty crocker ready mix cakes dry, so nag stick ako sa duncan hines. Then I used betty crocker frosting then wilton sprinkles to decorate the cupcakes. Then slowly slowly I did the frosting myself na using butter and sugar, then naging margarine and sugar, because of the trans fats in butter. Then i learned how to make marshmallow fondant, etc. Now i'm not using duncan hines or betty crocker na, i usually get recipes from the net or sa books na lang, then inaadjust ko na lang yung ingredients according to my preference.

i tried vanilla, banana and chocolate cupcake na. my vanilla cupcakes were too "siksik", my chocolate cuppies aren't too chocolatey enough pero yung banana cupcake ko... perfect!! hihi. pa-share naman ng chocolate flavored cupcake recipe nyo oh... or any other flavor pa na tried and tested nyo na.

as for the frosting, hindi pa ako nakakapag-try ever. ask ko lang, para magkaron ng blue tint yung buttercream frosting, oks lang ba na yung ordinary food color (yung nasa liquid bottle na maliit) ang ilagay? thanks mga sisses, in advance ha.

Hi curiousmama10..  Did you use a mixer for step 5,6 and 8?  Or can be done using hand lang?

Banana Cupcake

Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp banana essence
1/3 cup melted butter (or vegetable oil)
1 1/4 cup sugar
2 eggs
2/3 cup evap milk mixed with 1 tsp vinegar
1 cup banana (mashed) -- around 4 bananas

Procedure:
1. Pre-heat oven in (350 deg F)*. Lined the cupcake pans with paper cups.
2. Sift the first four ingredients together. Set aside.
3. Mix oil, sugar & eggs. Medium beat.
4. Alternately pour the sifted ingredients (2) and the milk & vinegar mixture into the oil-sugar-egg (3) mixture, while beating.
5. When well blended, fold in the mashed banana.
6. Fill the cupcake cups with the blended mixture, 3/4 from the rim.
7. Bake until the cupcakes are orangy in color.

Makes 2 dozens.

Tips:
1. *I actually use 150 deg C in my oven. I used 160 deg C before, pero ang dali masunog nung cupcakes. Mas maganda that you bake it gradually.
2. Use bananas that are really lamog na. I actually buy bananas then kept it for 2 to 3 days before using it. Why? Mas lamog yung bananas, mas moist yung cupcake.
