i swore off kare kare the first time i tasted it. di yata maaayos yung pagkakaluto nun, kasi pakiramdam ko may buhangin yung kinakain ko. di siguro nadikdik nang masyado yung nuts...or ganun talaga dapat yung texture? natuto lang akong kumain ng kare kare, college na ako.

Mama's recipe

1 kilo beef pata or pork with taba
1 puso ng saging, cut into cubes
2-3 pcs eggplant, sliced
1 tali sitaw
1/2cup peanut butter (Ludy's/Angel Peanut Butter)
Atchuete

Lagay sa half cup hot water yung atchuete and set aside
Mix yung peanut butter with half cup water and patunawin

Boil yung beef/pork till tender.
In a separate pan, saute the garlic and onions, then add the beef/pork and yung pinaglagaan ng beef/pork. Pakuluin.

Add the peanut butter and the sabaw ng atchuete (wag yung seeds) then mix, simmer muna. Add the veggies and simmer till veggies are tender na rin.

Best with Barrio Fiesta bagoong in Spicy.

ako kc sis specialty ko talaga kare2.. di nawawala un sa mga requested pish ng mga friends ko pati mga anak ko.. ginigisa ko kc muna un meat bago palambutin.. tas separate ko niluluto un mga veggies, gisa din with garlic and onions.. half cook lang.. bagoong ko barrio fiesta spicy pero ginigisa ko sa taba ng pork.. Ayy, yummy.. parang gusto ko tuloy magluto ulet ng kare2.. Un kare2 mix na gamitin nyo combination ng mama sita's and del monte.. un peanut butter ludy's, lily's or yummy..

favorite ko kare kare miss honey :) magaling ka pala magluto niyan.. sa family din namin, di nawawala ang kare kare pag may handaan :)

when you boil the meat, should it be high fire or low fire?  also, more or less how long bago lumambot?

^depende sis if yung pork lang na may konting fat or if yung pata ang gamit. if pata mas matagal tapos high fire tapos pag nagboil na hihinaan nalang

all-time favorite ng family ko ang kare-kare!

sometimes, nilagyan namin ng chocnut, masarap din kaya lang mas gusto pa rin namin yun peanut butter. hehe..

Natuto ako magkare-kare ddahil namimiss ko yung kinakainan ko sa kainan malapit sa isang center namin. Since 3 branches hawak ko, ever other week ko lang sya natitikman.

Eto yun naging recipe ko:
-1 kg Pata
-1 bundle petchay
-1 small puso ng saging
-1 bundle sitaw
-1 small pack ground rice
-1 bottle ludy's peanut butter
-1 pack atsuete

1. Pinalambot ko gamit ng pressure cooker yun pata, nilagyan ko ng onion and garlic.
2. Tinosta ko yun giniling na bigas. Set aside.
3.Blanch yun vegetables.
4. Nagpainit ako ng oil at nilagay ang atsuete. After noon, gisa onion and garlic then lagay ng stock and peanut butter. then pata. Lagay na ng veggies.
5. Mix na yun giniling na bigas. Season with salt and pepper.

My hubby is a caviteno kaya palagi nyang pinagmamalaki na when it comes to kare kare ,he is so pihikan…w/s is true naman. ;D Pasado ang kare kare ko sa kanya, thanks to my mom who happens to be a good cook. ;) I use giniling na mani and not bottled peanut butter na nabibili sa mga supermarket. When I was still in P, I used to buy giniling na mani sa trusted suki ko sa palengke. Since dito na ako sa Kuwait ngayon, I make peanut butter from scratch. Sangang sa mantika ang mani until maluto but not too much kasi papait then I put it in the blender para maging paste  sha…Yung giniling na bigas naman I used to buy din sa palengke before, but now sinasangag ko nalang yung powedered rice na nabibili sa Asian store..ang result…same kare-kare na niluluto ko sa pinas. Regarding bagoong, I use Dagupan brand, pero ginigisa ko ulit sha sa garlic and onion para mas masarap. Yung powdered rice ang nagpapalapot lalo sa sauce ng kare kare.
kung kaya nila, kaya ko rin! :)

nung nasa pinas pa ako di ako masyado nagkaka kain ng kare kare except sa mga birthdays/gatherings/catering. di kami nagluluto niyan kasi nga matrabaho masyado.  ngayon naman eh hinahanap hanap ko ang lasa. may pinoy resto dito kaso di ko type ang kare kare nila.  try ko magluto nito minsan, the hard way with giling giling pa.
eto na naman sila, "mas better" , "pinaka the best"

bigas? Malayo kasi ako sa palengke kaya sa grocery lang lahat eh
Gano kaya kadami water at peanut butter pag half kilo?

may natural brand ng peanut butter ng skippys thats what i use. di ko alam yung authentic way eh and mahirap maghanap ng mani na matotoast. i also use a lot of garlic and onions as in madami. i add spinach sa dulo para it'll still be crunchy and green. minsan i mix i a little bagoong in the pot lasang tunay naman minsan crockpot gamit ko for this.

what i do miss sa kare kare is yung puso ng saging another ingredient na mahirap hanapin. tho may nagiisang puso ng saging sa baby banana tree dito e di may anting anting factor pa yun if you get the midnight dew or something hehe.

Mama sitas Kare Kare mix lang gamit ko, plus add lang ako ng peanut butter, masarap yung Skippy brand, pero masarap din naman pag Lily's lang.

basta pakuluan ko lang yung ox tail, pag malambot na add ko ang vegggies, add mama sitas mix, and peanut butter, plus with crispy pork bagoong, ay naku
taob ang kanin hahah.

Has anyone tried the crispy kare-kare from "Hukad sa Golden Cowrie" ?
I'm not sure if they have branches in manil, but they have a few branches in the Visayas region.
Their crispy kare-kare is basically a deconstructed dish - they serve the ingredients separately and you get to choose and mix it yourself.  You get a dish of chopped crispy pata, hefty servings of vegetables,  and a small bowl of peanut sauce and bagoong.  I actually prefer their version because it doesn't include ox tail or tripe (i usually scoop this stuff out because i find their texture a bit weird and icky):P
