hi..this is in reply to the person from the us as well...
any pasta u prefer
pancetta ( italian bacon - regular bacon will do ) -- sauteed
regular milk/heavy cream
egg yolk
salt and pepper
parmesan cheese/mushroom/ham/peas/corn/ -- all depends on the person

remember to saute ur pasta first in olive oil until it gets a lil brownish and then boil it off as per package instruction--always use salt to flavor and oil to prevent from sticking together ( if youve added too much salt just rince with water ) then fry ur pancetta - oil from bacon adds flavor dont take off everything and add the pasta, milk and eggyolk, salt and pepper.

have fun!!

here's what I cooked for my bf last weekend - he literally polished off his plate!

Spaghetti pasta cooked according to direction
Bacon
Butter
Cream
Parmesan cheese
Garlic
Egg yolk

Sautee garlic in butter. Add chopped bacon. When bacon is crisp, set aside. Beat egg yolk, mix cream, pour over hot pasta. The heat of the pasta will cook the egg. Pour parmesan. Mix well until pasta is coated. Season with salt and pepper. Serve with garlic bread. :)

butter or oil
garlic
onion
all-purpose cream
chicken or bacon or beef or tuna
milk
mushrooms
salt & pepper
oregano & basil (optional)

saute garlic and onion in butter. use oil if you don't want it to be so creamy. add the meat then the mushrooms. season with salt & pepper and a little oregano and basil for taste. then add the cream and milk. simmer for a few minutes then its ready to eat na. :)

here's my version... medyo natagalan kasi i had to recall it and retry last sunday. well, masarap pa din naman.

1/4 cup butter
1 tbsp garlic
1/4 cup all purpose flour
1 small can evaporated milk
1/2 cup water
1 chicken bouillon cube
1 brick pack (250 grams) all purpose cream
250 grams fried bacon bits
250 grams fried ham bits
1 small can mushroom pieces
salt and pepper to taste
250 grams fetuccine, cooked as to package direction

sautee garlic in butter. add flour and whip until it thickens. gradually add water and milk. dissolve the bouillon cube in the mixture and let it boil. pour in the cream then mix in bacon, ham, and mushroom until the sauce becomes frothy. toss in pasta and remove from heat when the pasta is completely coated with the sauce (i always advise this para hindi madaling mapanis). season with salt and pepper.

yun, ok na... you may top it with cheese and chopped parsley ;)

i know i posted this in another thread (http://www.femalenetwork.com/girltalk/index.php/topic,142545.0.html)

anyway, i noticed that most of the recipes here are not carbonara; some kase think that if it's white sauce, then it must be carbonara.

cabonara's main ingredient is egg (yolks), what we do is we combine it with a portion of heated milk. may isa kong friend, nagpapasikat kase sa na-meet namin na chef. sa ka-malditahan namin ng sister ko, we asked the chef to explain what carbonara is - "eggs & milk yun"

most of the recipes here have cream as the basic ingredient - that's alfredo - nilalagyan ng meat (chicken, ground beef).

and the basic white sauce is called bechamel.

for your reference, please refer to the following:

Meriam-Webster
http://m-w.com/dictionary/carbonara

Wikipedia
http://en.wikipedia.org/wiki/Carbonara

Dictionary.com
http://dictionary.reference.com/browse/carbonara

hope this clarifies. ;)
